Coconut-Cornflake Cookies

A great coconut macaroon recipe, thanks for sharing LG ! The cornflakes add a biscuity taste and give a crunch. I followed the advice of many reviewers and cut the amount of sugar in half (125g) and it was fine for me (I did not use sweetened coconut and frosted cornflakes). It took 5 minutes to beat the egg whites until stiff and I baked the cookies for 13 minutes and they were golden, chewy and crunchy. A keeper !!!

Balsamic-Glazed Salmon Fillets

When I received this recipe by email I had already planned to make salmon the next day so it was a perfect match ! As other reviewers, I was a bit concerned about the amount of balsamic vinegar + mustard but the combination of acidity and sweetness of this sauce is well balanced. We had a thick, dark and tangy sauce contrasting with the buttery flavour of the salmon, plus it is easy and quick to prepare. This recipe is a keeper !!! Many thanks ISYBEL ;o)

Crustless Spinach Quiche

A good, quick and easy recipe ! I've made this recipe 3 or 4 times with some changes : I'm using 3 eggs for about 400g frozen spinach, only 1 cup of grated cheddar is fine for me or 200g of diced hard goat cheese which is my favourite. You can also add a finely chopped leek to the onion and some creme to the eggs. Next time I'll try to cook it into muffin cups as adviced.

Apple Pie by Grandma Ople

THANK YOU for sharing this GREAT pie recipe with us !! I made it today for our Sunday family lunch and everybody had twice. I made the crust myself and followed the reviewers advices by filling the crust with half the apples, dusting them with 4 spices (allspices ?) and pouring half of the caramel sauce on them and then the rest of the apples, spices, lattice top and the sauce. Maybe a bit too sweet but so comforting that I'm sure to make it again and again ;o)
