Slow Cooker Pumpkin Steel Cut Oats

The flavor was okay on this, but the texture was of sludge. Prepared exactly as written, you will get a big crock of sludge. If that's how you like your oatmeal, you might dig this, but it's just not my cup.

Miss May's Tuna Casserole

Family thought it was a good dinner and everyone finished their plates. The only problem is the recipe calls for entirely too much pepper and a little heavy on the salt, too. I recognized this immediately and only put in 1/2 T. pepper and 2 tsp. salt, yet that seemed a tad much, as well. I salt my pasta water well and didn't feel the need to really add more salt later, and I wouldn't go more than 1 tsp. pepper, maybe even a smidge less. We have made this more than once and will keep it in the rotation for a quick and easy home cooked meal.

Crispy Chicken Strips

I'm not sure if I over-crushed the cereal, but there was absolutely nothing crispy about this dish. The flavor was alright and the chicken cooked just fine, but the coating was just mush. Not sure I want to give this one another try...

Savory Pork Roast

My roast turned out extremely juicy, which made me very happy. The flavor of the rub didn't excite me too much, though. It was good, but nothing to write home about. The only other thing I would say is to take that roast out at about 150° and then rest it. I took mine out at 150° and it was SO juicy. Longer than that and it will probably be dry. These are the reasons I only gave 3 stars.

Apple Crisp IV

Winner. I used 4 Granny Smith and 4 Gala apples and that pan was packed as full as possible. Mine had to bake an additional 25 minutes for the apples to get tender, but once they were it was fantastic. Definitely eat this warm, and definitely do not make ahead. I did that. I made it the night before and it just got a bit soggy, but still good heated up.

Zucchini Bread

This is not a bad recipe at all, but it just didn't wow me, either. For me, the baking time was right on. It was a surprisingly wet batter, so I think that's why. I think that was because I did not strain out the zucchini, unlike some other folks per their comments. Our family likes this bread, but no one was totally sold on the chocolate chips, plus they all sunk to the bottom. (Afterward, I vaguely remembered a tip that if you are going to put chocolate chips in a quick bread or thinner-type batter that you shake the chocolate chips in about 1/4 cup flour and that will help them keep from sinking.) I still think it could use a little more spice, maybe some nutmeg and clove or something, in my non-professional opinion. Thanks for sharing this recipe. Give it a try! See what you think.

Crunchy Oven Fried Tilapia

It was good enough to eat, but we weren't wowed. The breading was very bland and by no means tasted like oven fried. It tasted like a bland and baked fish. We just didn't get any crunch from it. If I tried this one again I would have to do some tweaking. Thanks for sharing. I love trying new things, it's just different strokes...

Best Stovetop BBQ Ribs

I thought this was a good recipe. It was just okay for us. I prepared this exactly as written, with the exception of letting the ribs simmer for about 1 1/2 hours. I used Lea & Perrins Steak Sauce as that is what we had. While the ribs were fall-off-the-bone tender, we were surprised that the sauce didn't offer more flavor. This was easy and gave us a good meal, but I was hoping for more flavor with the ribs themselves. Maybe there is no "quick rib" recipe. Maybe the flavor would infuse more by marinating for a decent period of time in this sauce? I would try this one again, but would have to do some tweaking. Thanks for putting me on the right track for finding my own "rib taste".

Beer Pancakes

We made these with A&W Root Beer and they turned out fantastic. Personally, I couldn't put syrup on mine. They were just fine and sweet enough without it, but the kids wanted syrup. I can't wait to try this with other fizzy stuff. Great recipe!

Marbled Pumpkin Cheesecake

I made this for Thanksgiving dinner, and it was my first crack at a homemade cheesecake. It went over REALLY well! The family raved and I don't think it was all that difficult. The only problem I had was actually getting the swirl going on without actually mixing instead. Eh, practice makes perfect, I guess. Thanks for sharing! I will definitely be making this one again.

Calico Beans

This is excellent. I actually made some changes due to personal preference, but 5 stars to this one. Instead of lima beans, I use great northern beans. I added a can of pinto beans, as well. The only other change I made was I omitted the celery and sauteed the onion in the bacon/beef grease. Again, personal preference. Give this one a try!

Chocolate Fudge Buttercream Frosting

This frosting was way better than I expected. I was nervous using a fudge topping, but it was fantastic! Not too fudgy at all. I used this with Devil's Food Cake I. What a great combination.

Biscuit Baking Mix

I thought this was a pretty good recipe. I mostly used it for pancakes, for which it was missing a little something. I'm not sure what. I usually added a little vanilla, but that didn't do the trick. I used it for peanut butter cookies, which turned out fantastic. What a great time and money saver. Thanks for sharing!

Quick Chicken and Noodles

This dish was good. I thought there could be a few adjustments, though. The amount of noodles could probably be cut in half for the amount of broth called for. I ended up having to double the broth to a quart. I also used 1/2 teaspoon of pepper. That seems to be the norm for a dish this size. I was a bit liberal with the garlic powder, as well. My chicken was overcooked when all was said and done, so maybe next time I will not brown it as long beforehand. Thanks for sharing.

Easy Peanut Butter Cookies

This is a good cookie. Very easy to make and they bake up very soft. I thought they were perfect baked about 7-8 minutes. I think they could taste a bit more peanut buttery, though. Maybe that's just personal preference. My kids love them.
