Brigid's Blackberry Pie

I had a deep dish pie crust, so I added an extra cup of blackberries. I also made this with the addition of 2 tbs of cornstarch after reading some of the reviews, and I baked it for an hour at 375. the pie baked up fine, but I noticed that there were some areas where the sugar mixture hadn't melted into the juice. I suspect this was because of too much cornstarch. I also thought it was way too sweet. I think if I make this again, I'm going to cut the sugar back to 1 cup and cut out the cornstarch.

Crispy Rosemary Chicken and Fries

This was amazing. It was super fast and super easy to make. I used a whole cut up chicken, but otherwise didn't change a thing. Everyone fell on it like they'd never seen food and weren't sure they were ever eating again.

Seminary Muffins

I was looking for a recipe to use up some ripe bananas, the last of the oatmeal, and the little bit of chocolate chips I had sitting in the pantry. These muffins delivered, and then some. This is my new favorite muffin.

French Beef Stew

I've made this a few times and it's always a big hit. The only addition I make is about 2 tbs of tomato paste because I use a 28 oz can of crushed tomatoes, juice and all.

Spanish Flan

Absolutely amazing! I'm not a novice in the kitchen, but was a little nervous about making the caramel sauce. I ended up taking the advice from the Perfect Flan article and mixing in 1/2 tbls of Lemon Juice. I also took the advice of previous comments and used 5 eggs and blended the egg mix with my stick blender and baked it in a water bath.

Italian Breaded Pork Chops

Wow. This were probably the best chops I've ever made. Per other reviews, I double dipped the chops and they came out great. My husband devoured his, then ate the few scraps of meat left on the bone on mine chop.

Warm Dijon Potato Salad

Pretty good. Took the advice of others and made it with 1/4 cup sour cream, 1/4 mayo, and double the dijon. I was out of green onion so I added about a quarter of a vidalia chopped fine instead, as well as a dollop of horseradish sauce (my husband loves the stuff), a dash of celery salt, and some fresh dill. It was definitely a big hit.

Belgium Beef Stew

Blueberry Pie

Great pie! Per some of the other reviews, I upped the cornstarch to 4 tablespoons, but I wished I gone to 5 as the pie was still a bit wet after sitting for 3 hours. That was probably my fault; after checking on the pie 20 mins in I had to cover the edges with foil and I turned the heat down to 400 to keep them from burning. I also added a tablespoon of lemon juice. I'll definitely try this pie again.

Chocolate Chip Banana Muffins

I was looking for something do with overripe bananas, and this was a big success. I didnt have yogurt and only had olive oil so I used buttermilk and butter flavored shortening instead. It took an extra 10 minutes to cook, but was well worth the extra wait.

Famous Pork Chops

Good recipe. As per other reviews I removed the foil with about 15 mins left to go, but I didn't decrease the butter. At the end of 45 mins chops were still very soggy. I had to give them another 20 minutes and then I only took them out because I was more worried about the chops drying out before the crust got crispy. Still the flavor was good and it was super easy.

Mel's Magnificent Chocolate Chip Cookies

Great cookie! I admit I picked it based solely on the name. Followed the recipe except for accidentily adding too much vanilla. I also needed to bake them for around 12 minutes. Then I had to let them cool for quite awhile before even attempting to eat; even so the cookies were soft and chewy.

Sweet Pork Chops

Very good! The only changes I made were browning the chops for 5 minutes a side before starting the sauce... and about the sauce. Maybe it was that I left the heat up on med-high but the sauce began to get very thick 5 minutes into cooking. By the time the dish was done I didn't need to thicken it, I actually had to add a little apple juice to thin it out, and still didn't have enough sauce. Next time I guess I'll double the amounts and go from there.

Delicious! No I didnt discard the garlic, and I mixed the cheese with the breadcrumbs. I also added a tablespoon and a half of lemon juice. Definately will be making this again.

Green Tomato Pie III

Good flavor, maybe a bit much on the nutmeg, but my pie came out very runny. I had upped the flour like some of the reviewers suggested but it was so wet that even after an hour in the oven the crust was still doughy. I may give it a try again because the flavor was really really good, but next time I'll par bake the bottom crust AND try the tapioca another reveiwer suggested.

Beef Bourguignon III

Maybe I did something wrong but it came out very disappointing. The meat while flavorful was not tender. And as far as the gravy... there wasn't nearly enough. I thought Beef Bourguignon was supposed to be a stew but in the end, I had to add quite a bit more beef broth just to have a bit of gravy to serve it with.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

I had about a pound of ground beef that I needed to use up so I made a half recipe. I had to substitute: I was out of chili powder so I used equal parts paprika and red pepper flakes and I also diced up fresh tomatoes instead of using canned. My husband, not the biggest taco fan, loved it. Will definately be making this again instead of the *taco kits* we usually get.
