I accidently used double the liquid, keeping the other ingredients the same and thought the consistency was perfect. A little bland but a good start. I will try adding garlic and/or mozzarella cheese per other reviewers suggestions next time.

Fast and Delicious Black Bean Soup

This was pretty good. I might try it again with some of the suggestions of increasing the cumin or adding a stalk or two of celery. Although it was good, the Black Bean and Salsa Soup recipe is still my favorite.

Broiled Tilapia Parmesan

Cut this down to just two servings and sprinkled panko bread crumbs in the butter mixture for texture. The cooking time was perfect and the fish came out perfect! Pretty good flavor. Might punch it up next time, but will add it to my various ways of preparing tilapia.

Easy Garlic Broiled Chicken

These were very good. I used skinless chicken thighs. The first time I made them in the oven per the directions, but the second time we put them on the grill. Even better! This will be our go to marinade all summer. Thank you!

Tomato Zucchini Casserole

Delicious! Changes: I used crushed crakers instead of bread crumbs and decreased the amount of butter to 2 Tbl. Used mozzerella cheese instead of chedder as others suggested. I found I didn't need the entire cooking time. It was mostly done during the first phase with the foil on, but I left it in anothr 10 minutes just to be sure. Yummy!

Enchiladas

This was very good for how easy and simple it was. I only had a jar of store brand picante sauce on hand, but it was still a really good flavor. My only additions were ground turkey instead of ground beef and I sprinkled it with 1-2 tbl of taco seasoning mix (from this site). Will add this to my list of quick dinner ideas. Thanks!

Banana Muffins II

Followed the recipe exactly and added just a splash or two of vanilla extract. WONDERFUL! Just the right amount of sweet, great texture, and the muffin tops baked up perfectly. I agree that you want to be careful to not over mix. Fold in dry ingredients until just combined. Everyone, from my 2 year old to my husband, loved these!

A pretty good meal to throw together quickly on a busy night. I added fresh minced garlic to the meat, cooked the noodles separately and then combined and put in the oven. It was pretty good, but a little peppery for my taste. Will reduce the salt and pepper next time.

Cheesy Beans and Rice

The first time I made this, following the recipe as is, it was good, but not great. It seemed like it just need a little bit more flavor. My local grocery store doesn't carry a 14.5 oz can of diced tomatoes w/ green chilies (only a 10.5 oz can), so the next time I made this, I used a 14.5 oz can of diced tomatoes along with a 4 oz can of green chilies. That made all the difference! We got more flavor with the chilies and it brought all the flavors together. Now it is great and is a regular meal in our house. Thanks!

Room 157 Sugar Cookies

Not bad for a butterless, shortening-less cookie. It certainly satisfied my after-dinner cookie craving and my daughter liked them okay. Not the best cookie I've ever tasted, but definitely not horrible. The whole wheat is not over powering either. I would make it again but probably only a half batch.

Black Bean and Corn Salad II

This was very good and a hit at the pool party that I took it to. Used only 4 green onions, used less cilantro, and used a previous suggestion of increasing lime juice and reducing olive oil. Will come to this again, and gain. Delicious!

Microwave Corn on the Cob

Stumbled upon this one night when my range was not working. Microwaved right in the husks for 3 minutes on each side, two ears at a time, and let them stand for a bit to cool. Absolutely PERFECT! Buh-bye boiled corn!

Cinnamon Orange Turkey Scaloppini

This sounded so good, but just didn't work for me. So many people commented that their kids liked it, so I cooked it with the hopes that my 5-year would eat it. I mostly tolerated it so I didn't bother to serve it to her. I might try it again to just to make sure I didn't mess something up, but otherwise this one might not be for me.

Black Bean and Corn Quesadillas

Very good, quick, meal. I threw this together in just a few minutes and it was quite tasty. I added cumin and garlic powder. I also used frozen corn with no problems. Glad to have another meatless meal to add to my recipes.

Blackberry Cobbler II

This was my very first cobbler. For a first attempt, it was easy and soooo good! To make a smaller portion for just me and hubby, I used half the berries/sugar mixture and 3/4 of the dough, while reducing the sugar as others suggested. The mixture fit perfectly in an 8in cast iron skillet and came out perfect. Excellent recipe! Looking forward to trying other berries or fruits the next time.

White Cheese Chicken Lasagna

Fantastic! I usually don't serve a dish that I've never made to company, but this was a HIT with kids and adults alike! I only used 10 oz of spinach and mixed it in with the ricotta. I used the layering technique of another poster and decreased the mozzarella that you sprinkle on the layers to a cup. Will not make it too often just because it is so rich, but very good.
