Creamy Blue Cheese Salad Dressing

This is ridiculously easy and SO good! It's very thick which was perfect since we used it as dip for buffalo chicken wings. The ingredients are all things we had in the fridge or pantry, so it's cheap and very easy. I didn't really measure the ingredients, just to taste and added some black pepper and a tiny bit of salt. Fabulous!

Avocado Green Goddess Dressing

This dressing tastes good and is very refreshing if you chill it in the fridge. After reading the other reviews, I made this with sour cream (low-fat) instead of mayo and added some low-fat buttermilk to thin it out. I increased the avacado and green onion as well. I served it on a salad of romaine with hard boiled eggs, and very crisp bacon like one reviewer suggested. FYI this has a pretty strong anchovy taste, so beware of using extra.

Spinach Dip with Water Chestnuts

Good but you definitely need to make it ahead of time and let the flavors meld in the fridge for a few hours. Over night is even better. Otherwise all you taste is the dry soup mix.

Swiss Chicken Casserole II

This is so easy and tasty too! I layered everything in the crock pot with frozen green beans on the bottom and set on low for about 4 hours. Worked great! Next time I might try cornbread dressing just to see if it's better.

Chicken Pot Pie IX

I followed other reviews and doubled the sauce which really helped it to be moist, but next time I will use a deep dish pie crust to hold all the filling. I also added a little cubed potato, poultry seasoning and garlic powder as was suggested. I had to add extra salt and pepper too. The pot pie was very good but it just tasted a little different than what I expected. The crust was the best part; go figure, the store bought part was the best.

Spicy-Sweet Glazed Salmon

Absolutely delicious! I cut down on the brown sugar and doubled the crushed red pepper because we like things extra spicy, and it was perfect. I did the set up on my lunch hour and let it marinate for about 5 hours until I got home. It turned out great!! I served it with Japanese Style Sesame Green Beans also from this site. Perfect dinner! Thanks!

Blackened Salmon Fillets

This is a fantastic recipe! My boyfriend and I lived in Alaska and worked in a fishing lodge, so we know salmon. I am always looking for recipes that do not overpower the taste of fresh salmon and this was great. I substituted some of the salt for garlic salt, and added a little chili powder and extra cayenne. I only used half of the butter (actually used Smart Balance Light) and cooked it in an iron skillet on the grill. I heated the empty skillet for about 20-30 minutes on the grill at high heat and only let the salmon cook for about a minute or less on each side. I served it with a dip of sour cream, horseradish, lemon juice, cayenne, paprika, garlic salt, and minced dried onion.

Corn Dogs

These are really good and so fun! My fiance and I have an electric fryer that we like to break out when we're feeling extra unhealthy and these are our favorite fried delicacy. Corn dogs are not just for kids you know! We like to use buffalo hot dogs and they are fantastic in the corn dogs.

Bacon and Tomato Cups

You definitely need to use fresh basil and I also added cracked pepper. If you mix the ingredients (except the biscuits, of course) ahead of time and put it in the fridge for a couple hours, the flavors really meld. Thank you for the recipe. I know these will become a staple in my home for parties and get togethers.

Special Deviled Eggs

These were really good! These went so fast at our 4th of July party so I am glad I doubled the recipe. I used a little less mayo and mustard so that the filling wouldnt be too runny. I also left out some of the relish because I thought it made them a little too sweet. All in all, definitely a repeat!

Creamy Potato Pork Chop Bake

So good and SO easy!!! I followed the recipe and even used low-fat milk, sour cream, and cheese and it was delicious! I admit I seasoned the pork chops with s&p and garlic powder before searing them, but that's the only change. My mom makes a potato casserole that is very similar to this and adds a small can of diced green chiles for a little kick. It's a really great addition to the casserole so I may try that next time with the pork chop bake, just to experiment. It's great just the way it is though!

Good but very rich. I grilled the chicken with some Italian seasoning and thought it was a nice addition. My boyfriend doesn't usually like leftovers but gladly took this to work the next day.
