Mock Tuna Salad

Reviewed: Mar. 11, 2008
It is ok, but doesnt taste like tuna salad at all. It tastes a lot more like potato salad...just add hard boiled eggs. I ate it by itself and it was ok, but I don't think it would be good on bread. Just think of a potato salad sandwich; a little too starchy.

Habanero Hellfire Chili

Reviewed: Feb. 27, 2008
Very good! Wonderful recipe as is, but I have to admit that I added a few things for personal taste. First, I used ground venison instead of beef or pork because we have tons of it in the freezer. (Didnt use the bacon) I also added fresh diced tomatoes, extra peppers and garlic, and a can of chipotle peppers in adobo sauce. (chopped the peppers and poured in some of the sauce) Amazing! Thank you, thank you! This will be my chili recipe from now on. Topped with sour cream and served with cornbread. Yum!

Bacon and Tomato Cups

Reviewed: Feb. 22, 2008
You definitely need to use fresh basil and I also added cracked pepper. If you mix the ingredients (except the biscuits, of course) ahead of time and put it in the fridge for a couple hours, the flavors really meld. Thank you for the recipe. I know these will become a staple in my home for parties and get togethers.

Garlic Top Sirloin Pot Roast

Reviewed: Oct. 31, 2007
Super easy and VERY juicy. I used beer instead of water and used extra liquid so that it covered the vegetables. I only gave it four stars because there was some spice/flavor missing and I can't figure out what it is. Oh well, it was a very easy dinner so I am sure I will make it again.

Portobello Mushroom Stroganoff

This was good, but I am not sure that I would make it again. I'll stick with Mom's traditional recipe.

Spicy-Sweet Glazed Salmon

Reviewed: Sep. 7, 2007
Absolutely delicious! I cut down on the brown sugar and doubled the crushed red pepper because we like things extra spicy, and it was perfect. I did the set up on my lunch hour and let it marinate for about 5 hours until I got home. It turned out great!! I served it with Japanese Style Sesame Green Beans also from this site. Perfect dinner! Thanks!

Japanese-Style Sesame Green Beans

Oh so good! I added two cloves of minced garlic and it was spot on. I made the whole recipe for just my boyfriend and me and yet strangely, there were no leftovers! :) So tasty and impossible to stop eating.

Spinach Dip with Water Chestnuts

Reviewed: Aug. 31, 2007
Good but you definitely need to make it ahead of time and let the flavors meld in the fridge for a few hours. Over night is even better. Otherwise all you taste is the dry soup mix.

Chicken Pot Pie IX

Reviewed: Jul. 26, 2007
I followed other reviews and doubled the sauce which really helped it to be moist, but next time I will use a deep dish pie crust to hold all the filling. I also added a little cubed potato, poultry seasoning and garlic powder as was suggested. I had to add extra salt and pepper too. The pot pie was very good but it just tasted a little different than what I expected. The crust was the best part; go figure, the store bought part was the best.

Spicy Garlic Lime Chicken

Reviewed: Jul. 23, 2007
Very tasty and easy! I prepared the chicken and my boyfriend cooked it in an iron skillet on the grill. The ckicken was very juicy and had wonderful flavor. I think next time I will slice the chicken and serve it fajita style with warm flour tortillas, beans and rice, and homemade salsa and guacamole.

Spicy Sweet Potatoes

Reviewed: Jul. 23, 2007
I followed the recipe exactly and I wasn't too impressed with the result. None of my guests complained or anything, but no one raved either. Definitely add some garlic salt or salt and garlic powder. By the way, if you are looking for spicy, these are not the potatoes for you.

Special Deviled Eggs

Reviewed: Jul. 5, 2007
These were really good! These went so fast at our 4th of July party so I am glad I doubled the recipe. I used a little less mayo and mustard so that the filling wouldnt be too runny. I also left out some of the relish because I thought it made them a little too sweet. All in all, definitely a repeat!

Artichoke Spinach Lasagna

Reviewed: Jun. 8, 2007
My boyfriend went crazy for this lasagna and tells everyone we know that they need to get the recipe from me. Next time I am going to add extra garlic, onion, and portobello mushrooms, and may try whole wheat lasagna noodles. Might mix in some ricotta too. Makes great left overs, by the way, hot or cold. Definitely a keeper!

Avocado Green Goddess Dressing

Reviewed: Jun. 8, 2007
This dressing tastes good and is very refreshing if you chill it in the fridge. After reading the other reviews, I made this with sour cream (low-fat) instead of mayo and added some low-fat buttermilk to thin it out. I increased the avacado and green onion as well. I served it on a salad of romaine with hard boiled eggs, and very crisp bacon like one reviewer suggested. FYI this has a pretty strong anchovy taste, so beware of using extra.

Blackened Salmon Fillets

Reviewed: Jun. 1, 2007
This is a fantastic recipe! My boyfriend and I lived in Alaska and worked in a fishing lodge, so we know salmon. I am always looking for recipes that do not overpower the taste of fresh salmon and this was great. I substituted some of the salt for garlic salt, and added a little chili powder and extra cayenne. I only used half of the butter (actually used Smart Balance Light) and cooked it in an iron skillet on the grill. I heated the empty skillet for about 20-30 minutes on the grill at high heat and only let the salmon cook for about a minute or less on each side. I served it with a dip of sour cream, horseradish, lemon juice, cayenne, paprika, garlic salt, and minced dried onion.
