This is a staple at my house. I can make a huge pot and freeze the leftovers. Tweeks I've made: I always leave out the celery and spinach. And I use 2 tsp of generic Italian Seasoning instead of the oregano and basil because I always have that on hand. I also use Italian seasoned diced tomatoes which adds a lot to the recipe. I just throw in a whole bag of lentils I have no idea it's two cups or not. Easily the biggest change - I use a LOT of balsamic vinegar. I don't know how much I throw in the pot but it's quite a bit and I always add extra to the bowl that I eat out of. The balsamic vinegar makes this soup really outstanding. Without it, it's just so-so.

Chickpea Curry

I make this close to once a week and it's easily my favorite dinner. I use 1 tsp ground cinnamon and 1/2 tsp of ground cloves as other reviewers had mentioned. I usually leave out the cayenne for my 4 year old and will add it at the end on my plate only. Also add a can of diced tomatoes. I keep some ginger in my freezer just for this recipe. It's pretty cheap and keeps forever in the freezer. Thanks to Alton Brown for that tip. This is absolutely delicious!!

Easy Vegan Whole Grain Pancakes

Easy to make and so good! They are denser than traditional pancakes, but really delicious. I really like them with the pecans and a little cinnamon. yum!

Easy Mini Quiche

Having never had quiche, I don't have anything to compare this to, but I thought that they were wonderful! I did need to add some salt to the egg or they were bland. Didn't have any dry mustard so I just some regular prepared mustard. I scale this to 6 and make them for a snack all the time. Very easy to make.

D's Famous Salsa

I love this salsa! I use one can regular stewed tomatoes and one can mexican recipe stewed tomatoes. This couldn't be easier to make. I through everything into the blender and it turns out perfect!

Broccoli Rice Casserole

This was very tasty, but I'm going to leave the water out next time I make it. It was very soupy and I had to cook it a lot longer than called for. This would also help the recipe to fit into the dish. By the time the water cooked out of mine the baking dish was only half full. I also used two cans of cream of mushroom soup b/c I'm a vegetarian and it was delicious.

Autumn Cheesecake

Delicious! This is the easiest thing that I prepared for Thanksgiving. It took almost no time to throw together. I used reduced fat cream cheese, but you would never know it, it came out very rich. I also ended up using a lot more cinnamon and sugar to coat the apples than what was called for.

Black Bean and Salsa Soup

I love this recipe! I use a can of diced tomatoes and green chiles instead of salsa. Along with canned black beans this recipe is sooo easy. I have found that I don't need to add any spices because the diced tomatoes are so spicy all ready. I make this once a week and eat it within two days it is wonderful!
