Jan's Holiday Dinner Rolls

I made these for Thanksgiving (almost forgot to review them). They are wonderful. The whole family loved them especially my son. I mixed the dough in my KitchenAid since my bread machine is to small. I was nervous because I had never used the KA for bread before, but it worked beautifully. I did use about 1 1/2 cups whole wheat flour. Thanks Jan for another great bread recipe!

Reviewed: Apr. 7, 2011 Loved them! I made 1/2 with regular hot dogs and 1/2 with hot links for my Husband. I still can't believe how easy they were. I had been wanting to try these forever but was slightly scared of making them.Wish I hadn't waited so long! Will be making these again.

Simple Carnitas

Wow. I cant believe I waited so long to try this! It is amazing. I served this with a homemade salsa verde. The broth was so yummy that I strained it and will probably use it to make rice or for a tortilla soup. I will be making this often. I just wish I had made more! Thanks Ken!!

Soft-N-Fluffy Hamburger Buns

Wonderful!!! I made these yesterday to serve hamburgers on. I did not need twelve of them so I made a half recipe. I only got 4 out of it. While making the half recipe in the bread machine the dough sucked the paddle of the bottom, so I took the dough and and let it finish rising. I thought the dough seemed a little stiff. So I got scared and started another batch. I decided to try a full recipe but had to use mostly wheat flour.( I did add more gluten) The full recipe made about 7 rolls. I think you would only get 12 if you made dinner rolls/sliders. The funny thing is that both attempts came out fantastic!!! I thought I was going to have to freeze some... but nope.My 4 yr old ate 2 yesterday. I also made a sandwich for lunch yesterday with one and plan on doing that again today.I will be making these again and soon because they are almost gone!

Honey Mustard Chicken with Pretzel Crust

Followed the recipe but added a little thyme to the breading. It was great! My husband loved the sauce. Thanks Kathleen. Will make again and share with others. When I described our dinner to my "foody" BIL he got very excited.

Best Ever Brisket

Have been wanting to make this forever. I finally found a brisket! So I go to get my spice mixture together and I can't find my chili powder! No time or $$ to go to the store. Since the chili powder is such a big part of the spice mixture at first I think I will have to find another recipe. And then I decided to try and find a substitute online. Sucess! ( 1tsp paprika, 2 tsp cumin, 1 tsp cayenne, 1tsp oregano, 1 tsp garlic powder) Just mix it all up and then measure out the two TBS. I had everything and the bonus was there was no salt in the homemade chili powder. This Brisket was wonderful!! I served it with mashed potatoes and asparagus. I poured some of the juice on my taters and meat for myself and put some Stubbs barbeque sauce on my DH meat. This will be my go to recipe for brisket. Thanks ChristineD

Potato Salad With Bacon, Olives, and Radishes

I was suprised how much I liked this. I have always had a hard time coming up with a tater salad that both my husband and I could enjoy. He doesnt like pickles or black olives and I dont care for chunks of reg. onion or hard boiled eggs. So this was perfect , we liked it all! I only used 4 taters becuase they were big and I should have used maybe 3 because I had to use alot more than 1/4 cup mayo. I also added some garlic powder and black pepper. Do not add salt!

Family Favorite Chicken Lo Mein

We really liked this. I think the black bean garlic sauce added a depth of flavor to the dish beyond the soy sauce and sesame oil. Mine was a little salty but that was my fault.I used chicken bouillon instead of broth and then added more soy sauce.I cooked up the whole box of pasta but did not use it all, I think 3/4 of a box was plenty. I also marinated the chicken in soy sauce and a little rice wine vinagar but I am sure it would have been fine without it.Will make again.
