My new conquest is bread, and this is a winner! I subbed white sugar for the honey, I may try brown next time for a richer flavor. I mixed it in my KitchenAid, but did all the kneading by hand. The flavor was spot on, the texture was perfect, it rose beautifully (which is an accomplishment for me!), and it kneaded really nicely. I switched the flours, used whole wheat bread flour, and all purpose, respectively, with no adverse effects. I ended up making buns with half the dough, and a giant loaf of bread with the other. Both are wonderful! Highly recommend, especially for beginners!
