Pittsburgh Potatoes

Reviewed: May 18, 2012
I was impressed with these -- I'm not normally a fan of Velveeta because it is processed, but I can see a use for it if it turns out creamy, cheesy cooking like this recipe! I added some bacon to this recipe to give a little bit of extra flavor to it. My boyfriend raved and said this tasted like his grandmother's macaroni and cheese -- definitely a high compliment!

Colcannon

Reviewed: May 18, 2012
Delightfully simple and tasty -- I used kale instead of cabbage for more flavor. Took this to a work luncheon for St. Patrick's Day and it was a hit! I'll definitely be making it again with extra kale.

Country Apple Cobbler

Reviewed: Feb. 13, 2012
It doesn't get any better than this!! I've never tasted anything so absolutely delicious before... I think, if I were about to perish, I would request this as my last dish because it is heaven!! I used gala apples (I think) and a mexican cheese mixture I had in the fridge. The only thing I didn't particularly care for were the nuts, I think they would give a better texture if they were finely chopped. BTW, cheddar cheese seemed like a strange thing to put on apple cobbler, and the dough did not look that promising when I topped the cobbler, but it is completely and totally worth it. A dense, flavorful, complementary topping for the wonderful apple goodness below. If you think apple pie is delish, this will blow you away!!

Peanut Butter Bars I

Reviewed: Feb. 13, 2012
These were definitely yummy, and addicting, but they are super rich and greasy... I think maybe removing some of the butter from the peanut butter mixture would help? These bars did not hold up after being cut into squares -- they fell apart in my hands and made my hands extra oily... Definitely delicious though! Also, if you're hoping for a smoother chocolate topping, this one gets hard as a rock after cooling, which I guess would be expected. I think it would be better with less greasy peanut butter layer and softer chocolate layer.

Yakitori Marinade

Reviewed: Dec. 21, 2011
This had a really good flavor... BUT I would not recommend using it on chicken wings. I think the flavors of this marinade would be better for beef or pork -- I marinated wings in this for half a day, and the skin on the wings was more like rubber when the wings were cooked.

Cranberry-Pumpkin Cookies

Reviewed: Dec. 19, 2011
I'll start with my son's review -- "this tastes like pumpkin pie" -- and it does. Of course, I always add nutmeg and ginger to anything with pumpkin in it, and it worked for these cookies as well. For the taste of the cookies, I have no complaint, they pass the test! But I kept them covered for two days and the pumpkin is so moist it kind of makes these feel and look like dough balls. I made them Saturday to take into work Monday, and this morning (Monday) they have some bluish-green mold growing on them :( So, be warned, put them in the refrigerator if they're going to last more than two days! Also, the cookies will retain their shape while baking, so if you don't want malformed balls at the end of it, you may want to smoosh them down a little. All in all though, these are a tasty treat, and I will be making them again :)

Citrus Turkey Brine

Reviewed: Nov. 28, 2011
I was skeptical, but I wanted to try something new with turkey, and boy am I glad I did! I followed the recipe pretty much exactly (substituted iodized sea salt though) and the turkey was very moist and tender... It smelled heavenly too! The only negative I had about this was the flavors of the citrus and spices did not transfer to the meat, and I would recommend to flavor the turkey with the seasonings you'd like if you do want meat that has some flavor to it (flavor other than the juicy, tender, delicious poultry flavor this brine enables, of course).

Oaty Cereal Bars

Reviewed: Sep. 14, 2011
I made these in preparation for hurricane Irene for the kids to have a yummy snack in case the power went out -- I've made these every weekend since! The kids adore them, and it's so easy and quick to make. I love that it uses peanut butter (I've tried it with creamy and crunchy and they both work great) and Cheerios. It seems like we always have Cheerios to use up, and this would work great for the stale ones sitting in the pantry, haha!

Fresh Peach Cobbler I

Reviewed: Sep. 14, 2011
This cobbler was YUM! I love the biscuit topping, it mixes with the peaches perfectly. The kids and the hubby gobbled this whole thing up in one sitting (and yes I helped!!)

Creole Pork Chops

Reviewed: Jul. 25, 2011
I added some shrimp at the end to put a twist on it, but it was great without! Also made my own creole seasoning with only a little bit of cayenne so my kids would actually eat this. My dad and my boyfriend scarfed it down, but the kids didn't seem to care for it as much as they liked the Creole Tuna on this site.

Salsa Cube Steaks

Reviewed: Jan. 15, 2011
A nice way to use cube steaks. I marinated my steaks in the salsa for a couple of hours before cooking, and I think the salsa helped to tenderize it. I would definitely not add water, because cooking these covered keeps a lot of moisture in it already, it seemed to be too watery to me.

Turkey Tetrazzini II

Reviewed: Jan. 9, 2011
I added seasonings to the sauce, but I love to use a lot of seasoning, so to each his/her own. I think baking this for so long made it a bit too dry, was like eating noodle paste instead of something creamy. Would rec decreasing baking time/temperature.

Turkey Enchiladas

Reviewed: Jan. 9, 2011
A great way to use leftover turkey, but I've had better enchiladas. I didn't care for the enchilada sauce, next time will probably just make my own. :)

Chocolate Mint Sugar Cookie Drops

Reviewed: Dec. 7, 2010
These were good, however I recommend using only one cup of chocolate chips - it was really hard to work in the the full two cups, I ended up taking out about half of them. Also, note that the cookies will retain their shape. I flattened them with my palm before baking them. Also, put 1 tsp of mint extract in place of using the mint chocolate chips, just used regular chocolate chips instead. All in all, one good cookie!

Mushroom Risotto

Reviewed: Sep. 3, 2010
Smelled really great while I was making it -- BUT I think it had way too much parmesan cheese in it, and I only used 3 cups of chicken broth (5 seemed a bit excessive). I would put a whole stalk of celery in it next time, I added some oregano, and would cut the parm cheese at least in half to make this more tolerable. With a few changes, recipe could be great, but as is seems to just be missing something. Also makes way too much for 4 servings - I would cut the recipe in half for 4 people :)

Hearty Skillet Supper

Reviewed: Aug. 31, 2010
I will say this dish was decent: my kids actually ate it, and it was simple and fast. However, I would probably only use this recipe as a last resort for a rushed busy weekday. There was an overall lack of flavor, and nothing stood out in particular. Also, leftovers were even more bland, which seemed impossible because there was so little flavor to begin with.

My kids didn't like it, but not saying it wasn't decent. If you like cheeseburgers this is definitely for you.
