About this Cook
I love to cook. I usually make a huge mess that I hate to clean up. I hardly ever cook out of a box, I like to make everything fresh and from scratch. I try, when I have time, to can and freeze veggies in the fall to use through out the winter.
My favorite things to cook
I like to cook big meals for family. I have some good enchilada recipes and I like to make chili rellanos. I also have a really good recipe for ribs that everyone likes, and I get requests for lasagna and home made chicken and noodles. I love to cook anything that everyone likes eat.
My favorite family cooking traditions
My family doesn't really have any real cooking traditions, however my Mother and Grandmother both used to can a lot. Now I have my own garden and can tomatos and green beans with my girls. We also freeze other veggies to have for the winter. I never got to can with my Grandmother I just remember always seeing the jars and boxes. But, after school would start in the fall my Mom would start canning and can remember coming home and she would save the tomatos and beets for me to "slip". I used to love that. Now my daughter likes to peel the tomatos for me.
My cooking triumphs
Any thing I make that my mother in law likes and wants the recipe for!
My cooking tragedies
I don't really have anything that comes to mind. I am sure my husband does though. He thinks having shepards pie for dinner is a tragedy.

Mosaic Salad
This is a great recipe. I didn't have the grated lemon peel, used lemon pepper instead. Absolutely wonderful!!

Italian Confetti Pasta Salad
I love this salad. I pretty much followed the recipe. I used leftover penne pasta and didn't have any olives to add and it was still vary good. I love the tasts of the fresh basil. I planted an herb garden this summer and have been looking for recipes to use them in and this was great. I used my first 2 ripe tomatoes also. Wonderful, definately a keeper!

Savory Summer Squash
This was a great recipe. I will definately be making this again! I did substitute fresh rosemary for the dried marjoram-just a personal preferance. I planted an herb garden this summer and have been itching to start using them. All in all it was wonderful, thanks for a great recipe.
