Yakisoba Chicken

Middle Eastern Rice with Black Beans and Chickpeas

Easy to make, smells wonderful, packed full of protein, and the kids loved it. I had plenty of leftovers and repurposed the turkey, beans, and chickpeas in tacos--just added some Mexican seasoning and served with all the fixings. Two hits from one recipe.

Hummus III

The first time I made this I used raw garlic cloves--overwhelmed the hummus. The second time I roasted the garlic cloves and then added. Perfect.

Crustless Spinach Quiche

Perfect breakfast dish for anyone watching their carbs. I make this at the beginning of the week using whatever vegetables I have on hand. Instead of muenster I use herbed feta cheese--a lot of flavor with just a small amount of cheese. So easy and so good.

Chai Tea Mix

Too yummy. Like many others, we made it as Christmas gifts in mason jars. To save money I did the recommended adding vanilla to sugar and skipped the vanilla-flavored creamer. I did spring for the cardamom, however--it's just not chai tea without it.

Tangy Grilled Pork Tenderloin

Yum. Flavor balance was perfect, pork was so tender. I baked it in the oven on 400 until the meat thermometer read 140. The 3-year old asked for seconds. Will make this again and again.

Sausage Barley Soup

I used chicken link sausage that was already cooked--put all the ingredients straight in the slow-cooker and skipped the browning sausage/onions/garlic step (less time, less clean-up). Smelled incredible and tasted great. Good way to get the kids to eat spinach. Will definitely make again.

Awesome Slow Cooker Pot Roast

This was my first pot roast and this recipe made it super easy. My husband went back for seconds and thirds. For the liquid, I used half beef broth and half red wine. Nice touch.

Zucchini and Pork Soup

As a working mom of 2 toddlers, I'm always looking for a time shortcut. I followed all of the ingredients as listed, except I put everything into a slow cooker (I even skipped the browning of the meat and veggies--less pots to clean). I cooked it on low for about 7-8 hours overnight. The smell was delicious and it is a very yummy, savory soup. The husband and kids didn't rave about it, though, so I gave it 4 stars.

Slow Cooker Chicken and Dumplings

Everyone (the husband, 3 year-old, and 1 year-old) ate this and liked it. I did add some extra seasoning as some of the other reviewers recommended and shredded the chicken about 2 hours before it was done (5 hours seemed to be plenty, and it was nice and tender). I don't know if the kind of biscuit used makes a difference--I used reduced-fat buttermilk. I'd be interested to hear what others recommend. Will definitely make again.
