Potatoes and Corn Soup

Quick and fun to play around with. I use the premade mashed potatoes, skip the celery (don't like it), and often add whatever veggies I have on hand, or sausage. It seems you can't really screw this up - it's creamy and filling.

Country Cooking Slow Cooker Neck Bones

Vinegar-Based Fruit and Veggie Wash

I use a slightly different ratio of one cup vinegar to three cups water. I put soft skinned items in a bowl and soak them for about two minutes, longer for bumpy stuff like cauliflower and broccoli. If you soak strawberries too long, you'll start to get a vinegar taste even after you rinse them off.

Oatmeal Energy Balls

There are a million variations on this recipe, but this is the one to start from. It would be difficult to screw up this recipe. Add whatever you have in the cupboard (sunflower seeds, flax seeds,dried fruits, etc.) and adjust the rest of the ingredients so it's still moist enough to make a ball. I don't worry to much about spoiling, since they rarely last more than a day or two.

Owen's Mozzarella and Tomato Salad

Grandmother's Buttermilk Cornbread

After making this cornbread numerous times, I decided to give it five stars. Everyone in my family, my friends and neighbors all agree that it's the best they've tried outside of a restaurant. My father in law asked me to give it to his wife! No tweaks, no changes, no substitutions. I do cook the bread in a metal pan, and I've had equally good results using a pre-heated cast iron skillet and a metal cake pan - both greased. This gives it a nice crust on the bottom.

Applesauce Cake I

The batter is very thick when you're ready to pour it. Don't worry about it, trust the recipe! This is great, and easy to modify or add additional spices as you wish.

Perfect Pumpkin Pie

This was easier than going to the store and buying a pie. Plus, it tastes much better and you get the kudos for making your own. I change a few things, adding more cloves or nutmeg according to taste, and it always tastes great!

Easy Turkey Tetrazzini

Good comfort food, and a good way to use up leftovers. Doesn't save well, and sauce becomes really rich and thick - to thick. Not something I'd make for company, but good enough.

Chinese Chicken Fried Rice (edited)

I always double the recipe, and still only add half the pepper and no onions (or just green ones if I have them on hand). Sometimes we add cooked green peas, as well. No matter - it's always wonderful and makes great leftovers.

WWII Oatmeal Molasses Cookies

This is my go-to recipe for oatmeal cookies. I'm so glad I don't need to wade through dozens of oatmeal cookie recipies any more. They do well if you add 1/2 a cup of chocolate chips. I use sorghum instead of molasses and add some cinnamon.

Buttermilk Pancakes II

I've made this with buttermilk that had been open a week, and it still tastes great. Easily adapted to whatever you want to add - vanilla, cinnamon, blueberries, whatever. I've made this almost ever weekend, experimented with additions, and never had a bad batch.

French Toast Casserole

Have made this twice for my family, and will keep making it. Actually easier to make than individual french toasts, and very easy to tweak and play with. Haven't had problem with soggy bread (I use the cheap french bread bought at many supermarkets, torn into pieces) but you might try covering the dish while it bakes.
