Chinese Chicken Fried Rice II

I always double the recipe, and still only add half the pepper and no onions (or just green ones if I have them on hand). Sometimes we add cooked green peas, as well. No matter - it's always wonderful and makes great leftovers.

Owen's Mozzarella and Tomato Salad

I always add a touch of basalmic vingar, and I cut the tomatoes and fresh mozzarella into chunks. One of my "go to" recipes during the summer.

French Toast Casserole

Have made this twice for my family, and will keep making it. Actually easier to make than individual french toasts, and very easy to tweak and play with. Haven't had problem with soggy bread (I use the cheap french bread bought at many supermarkets, torn into pieces) but you might try covering the dish while it bakes.

Easy Iced Coffee

I call this my "white trash Starbucks." It's not perfect, but it's perfectly easy and cheap, and it's a great pick-me-up in the summer.

Basil Tomato Soup

I've added left over spaghetti sauce or diced tomatos - I've never had this soup come out wrong, no matter how much I "play" with it.

Potatoes and Corn Soup

Quick and fun to play around with. I use the premade mashed potatoes, skip the celery (don't like it), and often add whatever veggies I have on hand, or sausage. It seems you can't really screw this up - it's creamy and filling.
