Classic White Wine Spritzer

Seven Layer Tortilla Pie

WOW! This is a simple dish with TONS of flavor! I took advice from other reviews and cooked the tortillas for 5min before assembling. I doubled the cilantro and used a chipoltle cheddar then cooked in a springform pan. I added some pickled jalepenos for some heat as well as avocado. Next time I might add olives and chicken but it was superb without! I served with a chopped salad tossed with red onion, corn, pumpkin seeds, tomatoes, avocado and feta. Thank you, thank you!

Butternut Squash Bisque

This recipe is worth the task of cutting up the squash! I finally realized I had not been cooking the squash long enough and the soup had a funky texture. This time I baked the squash for 40 minutes face down in water at 375 degrees. I cooked the heck out of the carrots and squash and the soup pureed into a thick cream. I'm not a huge fan of nutmeg so I started with 1/2 teaspoon and added to taste from there. Next time I'll add cinnamon and try microwaving the squash for 10 minutes. The recipe was much better before I added the cream- doesnt need it.

Groovy Green Smoothie

Also made this recipe which someone suggested; it made about 4 cups. 1/2 cup carrot juice 1 cup raw spinach, 1 apple peeled, cored and chopped, 1 banana, 1 cup of strawberries. I added 1/2 cup blueberries and some soy milk which I had in the fridge. You can add any juice and friut to make it your own! Thanks for the ideas.

Chocolate Chip Cheese Ball

This was a big hit with friends! I used 1 cup confectioners' sugar. I also let the cream cheese and butter sit out at room temp. for an hour so they weren't too runny. I put the finished cheese ball mixture in the freezer for an hour (to cut down the chill time) and put it in a medium bowl. Then I flipped the mixture out and sprinkled pecans on top (will try toffee next time) and it was easier to eat than a "ball". served with chocolate grahams, a serving knife to spread and told people it was a "cheese cake cheese ball" which made people curious to try- who doesnt like cheese cake??

Absolutely Fabulous Greek/House Dressing

I have this on my counter next to the olive oil and vinegar. It is fantastic. I cut the recipe down to 12 servings and it fits in my dressing jar. Thanks!

Chicken Pesto Paninis

We love this recipe! I Think next time I will thinly slice they chicken for easier handeling. To make it easier, I may even use turkey. I will have to try caramelized onions too! Thanks!

Roquefort Pear Salad

Everyone loved this salad! I subed blue cheese for Roquefort, omitted the sugar in the dressing and used dijon mustard. Next time I will try and use honey instead of sugar to coat the nuts. Didn't have pecans and used almonds... TASTY!! The salad is so good on every level.

Downeast Maine Pumpkin Bread

This was my second time making this and it is so good. I followed the review from "MOM2SIXGREATKIDS". I made made muffins and cooked for 35-40 minutes. I will use this recipe for all my other pumkin breads including the one with chocolate chips!

Lentils and Rice with Fried Onions (Mujadarrah)

Five starts for and easy go-to meal. I added 1 T cumin, 1 T chili powder and 2t chicken boulion to lentils. I sauteed the onions for 30 to 40 minutes to get them nice and caramelized. Next time I will be sure to have sour cream or yogurt to top with.

California Grilled Veggie Sandwich

Great! Sauce was very flavorful and made the perfect amount. Turn the grill down for the bread (I burned mine). Next time I will use more feta or even a different type of cheese. Served with a red pepper salad.

Black Bean and Salsa Soup

This is a staple in my house! My hubby loves it and it is so easy to make. If I'm not in a rush I take others suggestions and I saute onions and garlic first and use 3 cans of beans, adding one at the end so it is not pureed- and don't forget to add hot sauce too! When we first moved into our new home, and I didn't have any food or appliances, I dumped everything in the pot and used a potato masher to mash it up. It was great!

Artichoke Spinach Lasagna

Awesome recipe! I altered the reciped per others reviews and used 3/4 to 1 cup of broth and did not boil the noodels as they cook in the sauce. Next time I may add some portabella mushrooms or use the classico sauce with mushrooms in it, as another person suggested.

Playgroup Granola Bars

I gave this 5 stars because I did so many alterations that there is no way I know what the original bar would taste like! However, I do prefer a more chunky bar made without flour. I followed the advice of the other reviews and used 2 cups oats, 1/3- 1/2 cup brown sugar, 1/2 cup wheat germ, 1 tspn cinn., 1 cup whole wheat flour, 1 cup mixture of raisens, cranberrys and walnuts, 3/4 tspn salt, 1/2 cup honey or splenda (used splenda), 1 egg, 1 cup applesauce for the oil (will try banana or peanut butter next time), 1tspn. vanilla ext., 1/4 tspn, allspice. I cooked for 18 min. Can you tell I like to substitite to make it healthier??

Microwave Corn on the Cob

EASY! When I'm only cooking for one or two and dont want to boil water or start up the grill- this is my go to recipe. Per other reviews, I pulled the husk 3/4 down and drenched the corn, rolled up the husks and put 2 in the micro for 5 minutes.
