Playgroup Granola Bars

I gave this 5 stars because I did so many alterations that there is no way I know what the original bar would taste like! However, I do prefer a more chunky bar made without flour. I followed the advice of the other reviews and used 2 cups oats, 1/3- 1/2 cup brown sugar, 1/2 cup wheat germ, 1 tspn cinn., 1 cup whole wheat flour, 1 cup mixture of raisens, cranberrys and walnuts, 3/4 tspn salt, 1/2 cup honey or splenda (used splenda), 1 egg, 1 cup applesauce for the oil (will try banana or peanut butter next time), 1tspn. vanilla ext., 1/4 tspn, allspice. I cooked for 18 min. Can you tell I like to substitite to make it healthier??

Microwave Corn on the Cob

EASY! When I'm only cooking for one or two and dont want to boil water or start up the grill- this is my go to recipe. Per other reviews, I pulled the husk 3/4 down and drenched the corn, rolled up the husks and put 2 in the micro for 5 minutes.

Artichoke Spinach Lasagna

Awesome recipe! I altered the reciped per others reviews and used 3/4 to 1 cup of broth and did not boil the noodels as they cook in the sauce. Next time I may add some portabella mushrooms or use the classico sauce with mushrooms in it, as another person suggested.

Basic Chicken Stock

I was just going to use this for the broth but the veggies tasted so good I had to make a soup! I used a chicken carcass, didnt have any cloves but thew in some peppercorn. Cooked for 3 hours. Will never throw out the chicken bones again. This was great and so easy!

Good for You Greek Salad

Great summer salad. I dont care for pasta- so I like this salad because it is low carb. Used light feta, 1/4 cup red onion. I seeded the tomatoes and cucumber and cut into small pices. Served with a pasta salad. I used this dressing based on another cook: 2T lemon juice, 2T red wine vinegar 1/4t each salt and peper 3T EVOO 1 1/2 t dried oregano. I chilled salad before serving.

Sunshine Morning Muesli

I just recently went to Brooylyn, NY and gave meusli a try at a cafe. I immediatly fell in love with this breakfast. When I came home I seached AR and found tried this one. I use whatever dried fruit I have on hand and add whatever fresh fruit I have on hand in the morning. So good and is a better option for hot oatmeal here in the Phoenix summers!

Seven Layer Tortilla Pie

WOW! This is a simple dish with TONS of flavor! I took advice from other reviews and cooked the tortillas for 5min before assembling. I doubled the cilantro and used a chipoltle cheddar then cooked in a springform pan. I added some pickled jalepenos for some heat as well as avocado. Next time I might add olives and chicken but it was superb without! I served with a chopped salad tossed with red onion, corn, pumpkin seeds, tomatoes, avocado and feta. Thank you, thank you!

Black Bean and Salsa Soup

This is a staple in my house! My hubby loves it and it is so easy to make. If I'm not in a rush I take others suggestions and I saute onions and garlic first and use 3 cans of beans, adding one at the end so it is not pureed- and don't forget to add hot sauce too! When we first moved into our new home, and I didn't have any food or appliances, I dumped everything in the pot and used a potato masher to mash it up. It was great!

Candy Coated Pecans

Great for gifts! I upped the temp to 300 degrees and cooked for 30 minutes. I added 1 T cinnamon -because I put it in everything- and a dash of vanilla. I also added a dusting of cinn/sugar. Thanks!

Groovy Green Smoothie

Also made this recipe which someone suggested; it made about 4 cups. 1/2 cup carrot juice 1 cup raw spinach, 1 apple peeled, cored and chopped, 1 banana, 1 cup of strawberries. I added 1/2 cup blueberries and some soy milk which I had in the fridge. You can add any juice and friut to make it your own! Thanks for the ideas.

Butternut Squash Bisque

This recipe is worth the task of cutting up the squash! I finally realized I had not been cooking the squash long enough and the soup had a funky texture. This time I baked the squash for 40 minutes face down in water at 375 degrees. I cooked the heck out of the carrots and squash and the soup pureed into a thick cream. I'm not a huge fan of nutmeg so I started with 1/2 teaspoon and added to taste from there. Next time I'll add cinnamon and try microwaving the squash for 10 minutes. The recipe was much better before I added the cream- doesnt need it.

Healthy Garden Salad

This was AMAZING and so beautiful! I have a similar recipe which uses avocado instead of edamame but this is more economical and will be a staple in my home! I'm going to make it for a party and think this amount should feed 15 people each a 1/2 cup serving.

Napa Cabbage Salad

Great Salad! I roasted the "crunchies" with 1T butter and 1t EVOO. I wanted the crunchies a bit more salty so I sprayed with spray butter before putting them in the oven. I also subsituted peanut oil for vegitable oil and rice vinegar for cider vinegar. I let the dressing boil for 1 minute to disolve the sugar. Next time I might add mandarin oranges. Will make again!
