Curried Carrot Soup

Reviewed: Apr. 19, 2012
very good soup as written but upping the curry powder to 3 tablespoons and adding about 2 tablespoons of chopped garlic to the onion mixture made this soup FANTASTIC. i made the soup stress and hassle free by using already peeling baby carrots instead of whole carrots and bottled chopped garlic. i also used chicken broth instead of vegetable broth. letting the soup sit overnight just made it that much better so this is perfect for make-ahead entertaining.

Banana Crumb Muffins

Reviewed: Aug. 15, 2010
very moist and delicious muffins. i followed viewers suggestions and used 1/4 cup brown sugar and 1/2 cup white sugar. i also added vanilla and cinnamon. however, i stuck with melted butter instead of subbing the oil since i thought it would give the muffins a tastier buttery taste. in addition, i added mini choco chips. it was sooo good.

Carrot Cake III

VERY good carrot cake. i used only 1/2 cup oil but extra apple sauce (3/4 cup) and it still turned out fantastic. yummmm...

Stuffed Peppers

Reviewed: Nov. 4, 2008
great recipe! the reason why i gave it a four star rating instead of 5, however, is that like other reviewers, i found that the stuffing only filled 3 peppers! next time, i will double the stuffing ingredients. my family had to share 3 peppers amongst ourselves for dinner!

Chicken Florentine Casserole

Reviewed: Nov. 1, 2008
this recipe was good but it did have some problems. i found that 1/4 cup butter was WAAAAAAAAAAAY too much because after i finished baking this dish, there was a thick layer of oil on top that was less than appetizing. another problem with this recipe is that the amount of italian seasoning called for is too much. the dish tasted medicinal because of it! i would cut it down to 1 tsp so that the herbs don't overwhelm the dish. i made it a second time with these changes and the dish was delicious. it was perfect served with some steamed rice. thanks for the recipe!

Brooke's Best Bombshell Brownies

Reviewed: Oct. 27, 2008
these were awesome. sooo rich and decadent. i would recommend baking for the full 40 minutes though cause 35 minutes produces a more cakey and moist brownie whereas the full 40 minutes allowed the brownie time to develop that chewy brownie texture that i was looking for. thanks for the recipe!

Slow Cooker Salisbury Steak

Reviewed: Oct. 20, 2008
the steak was really tender but i thought it was waaaaaaay too salty when combined with the gravy. my boyfriend didn't mind it too much (that's why i'm giving it a 4 star rating) but i found it a little hard to swallow. i think i'm going to use low sodium cream soups next time and also add a chopped onion to the meat mixture to help tone down the saltiness and further increase the tenderness.

Ranch Burgers

Reviewed: Oct. 20, 2008
used a pacakage of onion soup mix in addition to the ranch mix. i also omitted the bread crumbs. this burger was better than any burger that you would get at a restaurant. it needs no mustard or ketchup cause it's just sooo moist and flavorful. it's really good topped with american white cheese, garlic mayo, carmelized onions, bacon, and pickled japalenos. yuummmmmm...

Best Brownies

Reviewed: Oct. 20, 2008
i did not use the frosting for these brownies because i found the brownies sweet enough as is. i found the brownies very moist but the texture of the brownies didn't suit me. it wasn't fudgy but more cakey. i guess it depends on what kind of brownie you like.

Beth's Chocolate Chip Cookies

Reviewed: Oct. 20, 2008
i thought these cookies were only mediocre. what bothered me the most was the overwhelmingly eggy taste of the cookie. it also wasn't chewy despite having cooled it on the cookie sheet and taking the cookies out before they looked "done". i prefer the tollhouse recipe from this site.

Melting Moments II

Reviewed: Oct. 20, 2008
this cookie is delicious! i only refrigerated the dough for 30 minutes and it still came out great. this recipe can also easily be turned into thumbprint cookies. i used raspberry jam in the center of half my cookies which i thought made these cookies even better. thanks for the recipe!!!

Mexican Rice II

Reviewed: Oct. 20, 2008
this rice was awesome! i followed the advice of another reviewer and used taco seasoning instead of the cumin. i enjoy really flavorful food so i added 1 tbsp of the taco seasoning instead of 1.5 teaspoons. i don't usually use chicken broth (it's expensive!) so i just put in 2 heaping teaspoons of chicken stock powder in its place along with 2 cups of water and omitted the salt. i used fresh garlic instead of the garlic salt, used an entire onion, and also added a chopped up red bell pepper. it was soooo good. i will definitely make this again. i served this with "chicken enchiladas II" from this website and my boyfriend raved.
