Good Old Fashioned Pancakes

Very good- made as is. Batter turned out just a bit too thick for our liking, so added a few tbsp of water to thin a bit. Flavor is great- will NOT be using a box recipe again as this was so easy!

Banana Sour Cream Bread

Best banana bread I have ever made/ eaten. Everyone who tastes it agrees- it is so so moist and delicious. As others have said, the bake time does seem to be a bit off, but if you test the bread before taking it out, there should be no problems. I cut this in half and bake 1 loaf at 325 degrees for about an hour and 15 minutes

Delicious Ham and Potato Soup

Very good! I would leave out the 1/2 tsp of salt next time because I substituted some of the water with chicken broth.

World's Best Lasagna

This was a delicious lasagna, my family enjoyed it more than the lasagna my mom makes every year on Christmas Eve. Only made 2 changes 1. Store was all out of fennel seeds so did not use 2. Added about a half cup of red wine to the sauce Will make this again!

Chicken Enchiladas II

Very very good. I used 1/2 can cream of mushroom soup along with a whole can of cream of chicken soup. This was just enough to have enough sauce. Sprinkled red pepper flakes on top for some spice. Next time I would take the advice of others and add some taco seasoning for a little more flavor along with maybe refried beans. Yum.

Cheesy Italian Tortellini

Very very good with a few alterations: Used 1 lb italian sausage + 1/2 lb hamburger, both browned with onion and 3 cloves fresh minced garlic. Added to the sauce were red pepper flakes, basil, a small amount of brown sugar, and italian seasoning. My hubby did not LOVE this but he does not love italian in general. My picky 2 year old ate this for leftovers twice so I will definately make again

Bacon Roasted Chicken

Not really worth the time and effort for me. I stuffed the chicken with carrots, onion, lemon, and fresh garlic- otherwise followed the recipe as is. The bacon was OK. The chicken was tender and flavorful but it didn't WOW me. Probably won't make again. I've had rotisserie chicken from the store just as good!

Grandmother's Buttermilk Cornbread

Wonderful cornbread. If I would change anything it would be to use just a bit less sugar for a more traditional flavor but this was delicious just as it is. Served with black eyed peas-yummy.

New Year's Day Black-Eyed Peas

My husband hasn't had black eyed peas since he was a kid growing up in Mississippi so he was very exited about this. For a more traditional taste I left out the tomatoes. I used 10 pieces of bacon instead of ham. I added extra fresh ground black peppercorn and cajun seasoning. I also used 1 14 oz can of chicken broth and about 2 cans of water instead of the amount of water called for in the recipe. I used 1 med onion which was plenty. I wasn't thrilled about the taste in general but my husband just LOVED this dish. He said they were perfect. Next time I would use ham as called for instead of bacon for more flavor. I made cornbread with this which he mixed right in and said was delicious. I did also soak the beans for about 8 hours prior to cooking which did not change the cooking time
