Creamed Chicken for Biscuits

Reviewed: Nov. 12, 2010
No joke, my boyfriend applauded me at the dinner table, twice! Here are the changes I made to make this an applaud worthy dinner: half and half instead of heavy cream, no salt, frozen mixed veggies (thawed), 1 cube chicken bullion, no almonds, added dried parsley and tarragon. I had two chicken breasts so I cubed them and pan fried them in olive oil and garlic. Enjoy this comfort food on a cold winter night.

Chicken Alfredo with Plum Tomatoes

Reviewed: Jun. 28, 2010
This was lick your plate good! I doubled the wine and let the wine simmer with the tomatoes for a few extra minutes. I also browned the chicken with a little garlic. Peas went good with it on the side or mixed in like my boyfriend did. Pasta sauce in a jar never tasted so good.

Slow Cooker Barbecue Ribs

Reviewed: Dec. 8, 2012
These were some of the best ribs I've ever had! I only had 1 cup of ketchup so I used about 1 1/2 cups of chili sauce and I added chopped onion and 2 chopped garlic cloves to the sauce. I cooked in the oven and then exactly 6 hrs in the slow cooker. I finished them with 20 minutes back in the oven. These were fall off the bone tender and the sauce was tangy goodness.

I followed the recipe exactly and it came out wonderful. Even took out a bowl an hour early an it was good. The stew that cooked the whole time had meat that just melted in your mouth.

Linguine with White Clam Sauce II

Reviewed: Sep. 24, 2010
Pretty good and easy to make, next time I will try it with the lemon juice as suggested by other reviewers. Update: I have made this again with the lemon and it makes all the difference in this dish. Fresh is always better but I have used bottled lemon in a pinch as well.

Creamed Chipped Beef On Toast

Reviewed: Oct. 22, 2010
The husband could not get enough of this yummy comfort food. I used Carl Buding beef and doubled the sauce. The cayenne pepper gave it a little heat which was nice, add more if you like the spice. Served with veggies on the side. Will be making this one again and again.

Coconut Curry Tofu

Reviewed: May 24, 2010
Great sauce! I was looking for this sauce after having something similar in a resturant. The vegetables in this recipe didn't apeal to me so I just made the sauce in a separate pan. Then I pan fried the tofu in a little oil until it was golden on all sides. I then removed the tofu and added frozen stir fry veggies. When the veggies were almost done I added the tofu back with the fresh green onion, then poured the sauce over everything and let it warm to boiling before serving over rice. Wonderful!

Phyllo Chicken Packets

Reviewed: Mar. 1, 2011
Cut up the chicken into bite sized pieces and mixed it all together with the mayo mixture. This made it easy to assemble the phyllo wraps. I used spray olive oil to coat the phyllo dough. At the suggestion of others I decreased the amount of mayo I used. Other than that I followed the recipe as written. I would suggest serving with a starch because even though my fiance loved it, he was still hungry afterwards.

Dijon-Tarragon Cream Chicken

Reviewed: Sep. 28, 2011
If you cut the chicken into 1 inch cubes it speeds up the cooking time. Also after I took the chicken out of the pan I sauted mushrooms and garlic in the same pan until tender before adding half & half and mustard. I used dried tarragon and it came out awesome. A perfect dijion sauce!

Left out the mint and doubled the parsley, that's what I had on hand. And left out the tomatoes and used sundried tomato feta. Used two medium lemons. DH gave his stamp of approval, the lamb was awesome and I suggest using it if you can.

Baked Pork Chops I

Reviewed: Dec. 5, 2011
Great pork chop recipe. Made it exactly how the recipe is written exept I used two large pork chops instead of 6. There was enough sauce/gravy for the mashed potatoes. Also, I only needed to cook the pork chops in the oven for 40 minutes before adding the sauce.
