Made the recipe as is and it was wonderful. DH loved it and asked for it again. I like to add bacon bits as well. Serve with fresh bread.

Chicken Zucchini Casserole

Added 1 cup sharp cheddar, and used 2 carrots instead of 1. Can use a store bought roasted chicken or cook some chicken breasts in the crockpot and shred them.

Baked Eggplant Sandwiches

Made the exactly as it as written. Except no added salt, it's not needed in this recipe. I used the pomegranate molasses recipe from this site as well, really easy with only 3 ingredients. Would be great as an appetizer, just making the eggplant slices smaller. Quite possibly one of the best recipes I have found on this site. Thank you!

Whipped Cauliflower

I have made this out of the South Beach Diet before and love this recipe. DH has asked for this several times. I am only giving it 4 stars because I would never put canola oil in it, there would be danger of turning this dish into soup. I have used margarine instead. I have also added a little dried garlic, chives, onion, and greek seasoning. This can be altered to fit whatever you usually make your mashed potatoes with.

Fresh Southern Peach Cobbler

I did not personally cook this one, but watched as DH did. He used fozen peaches and they came out just wonderful. I helped clean the bowl the peaches and sauce were in. But the topping kind of ruinned the desert for me. It came out like a whole cake on top of the peaches. He has made this recipe three times in the past month so he must love it but I have had better cobbler.

Cheesy Ham and Hash Brown Casserole

Awesome! Added 1 green bell pepper and 1 medium white onion diced. Also used 1 can cream of potato And 1 can cheddar cheese soup. DH gave his stamp of approval by going back for seconds.

Baked Pork Chops I

Great pork chop recipe. Made it exactly how the recipe is written exept I used two large pork chops instead of 6. There was enough sauce/gravy for the mashed potatoes. Also, I only needed to cook the pork chops in the oven for 40 minutes before adding the sauce.

Tofu Parmigiana

I have never tried the frozen method to cooking with tofu but have been cooking with it for several years now. I buy extra firm tofu and let it sit for 15 - 25 minutes on a plate to drain the water, the texture has always come out great for me this way. Then I dip the tofu in egg before the bread crumbs to get the breading to stick better. If your a tofu lover you will enjoy this dish!

American Shepherd's Pie

I am only giving this 3 stars because with a few changes this recipe is so much better. Cook the beef and onion, leave out the celery. Use any cream of soup, I think it is best with cream of mushroom. Mix soup with Cooked beef and onion. Use this as the bottom layer. Add steamed or canned corn as 2nd layer. Mashed potatoes are the third layer. The use American cheese slices to cover top. My late father made this when mom was away. "snow on the mountain"

Dijon-Tarragon Cream Chicken

If you cut the chicken into 1 inch cubes it speeds up the cooking time. Also after I took the chicken out of the pan I sauted mushrooms and garlic in the same pan until tender before adding half & half and mustard. I used dried tarragon and it came out awesome. A perfect dijion sauce!

Easy Fried Eggplant

I used italian bread crumbs and mixed in some grated parmesan cheese. These were so good most of them never made it to the dinner table, I was eatting them as they came out of the pan. Will definatley be making again!

Squash Casserole II

I got some free squash and zucchini from a co-worker and found this recipe to try out. I did a few things different. I quartered the squash and zucchini and sauted them with the onions in olive oil and garlic. I didn't mash them but put the chunks in with the soup/sour cream mixture and added a can of Rotel. The Rotel gave the dish the flavor some other reviewers complained was lacking. My husband said he would have this almost vegetarian dish anytime.

Phyllo Chicken Packets

Cut up the chicken into bite sized pieces and mixed it all together with the mayo mixture. This made it easy to assemble the phyllo wraps. I used spray olive oil to coat the phyllo dough. At the suggestion of others I decreased the amount of mayo I used. Other than that I followed the recipe as written. I would suggest serving with a starch because even though my fiance loved it, he was still hungry afterwards.

Tofu and Cheese Stuffed Shells

Will be adding this to my menu for "Meatless Mondays." I didn't have to cook the carrot or zucchini at all, they we very moist when I finley shredded them. I used a jar Vodka Sauce and it turned out very good!

Creamed Chicken for Biscuits

No joke, my boyfriend applauded me at the dinner table, twice! Here are the changes I made to make this an applaud worthy dinner: half and half instead of heavy cream, no salt, frozen mixed veggies (thawed), 1 cube chicken bullion, no almonds, added dried parsley and tarragon. I had two chicken breasts so I cubed them and pan fried them in olive oil and garlic. Enjoy this comfort food on a cold winter night.
