Asian Beef with Snow Peas

Made it just as written. Easy weeknight meal with mostly stuff I had on hand. DH loved it but I am still off Asian food with my pregnancy. Will keep and make again after baby!

Ground Turkey Noodle Bake

This was a wonderful recipe. All I did different was use 4 cups of egg noodles. DH loves this recipe and asked I keep it in the regular rotation.

Slow-Cooker Barbecue Ribs

These were some of the best ribs I've ever had! I only had 1 cup of ketchup so I used about 1 1/2 cups of chili sauce and I added chopped onion and 2 chopped garlic cloves to the sauce. I cooked in the oven and then exactly 6 hrs in the slow cooker. These were fall off the bone tender and the sauce was tangy goodness.

Herman Reunion Cheese Ball

Great cheese ball. I used 2 packages of cream cheese, 8 oz of cheddar cheese and left the rest of the ingredients the same. The flavors came out wonderful, but it still made so much! I was told to hold onto this recipe by several of my family members at Thanksgiving.

Cashew Chicken with Water Chestnuts

DH loves this recipe with baby corn, a dash of sesame oil, and more siracha next time. Served with quinoa instead of rice and DH insisted this was restaurant quality. I think it was ok, but will make again for a happy husband.

Pork Fried Quinoa

Awesome recipe! First time DH tried quinoa and he said it was better than rice. Used green and red bell pepper in the dish. I didn't see were the rice vinegar was used in the directions so I left it out.

Stuffed Acorn Squash II

I made a few changes so I can't rate the recipe as written but it has proven to be a base for a successful dinner. If you have time I recommend baking the squash open faced, seeded, with water in the bottom of a pan and covered with foil for 50 minutes. The squash came out so tender. Then I rubbed brown sugar on the inside of the squash. For the meat I only had hamburger so I sauted that with onion, cumin, tarragon, and celery seed. You can play with the spices in the meat mixture to make it savory. I put the meat mixture in the squash, covered with foil, and baked for another 25 minutes. This was OH SO GOOD!

Slow Cooker Beef Stew IV

I followed the recipe exactly and it came out wonderful. Even took out a bowl an hour early an it was good. The stew that cooked the whole time had meat that just melted in your mouth.

Mediterranean Orzo Spinach Salad

Left out the mint and doubled the parsley, that's what I had on hand. And left out the tomatoes and used sundried tomato feta. Used two medium lemons. DH gave his stamp of approval, the lamb was awesome and I suggest using it if you can.

Chicken Zucchini Casserole

Added 1 cup sharp cheddar, and used 2 carrots instead of 1. Can use a store bought roasted chicken or cook some chicken breasts in the crockpot and shred them.

Baked Eggplant Sandwiches

Made the exactly as it as written. Except no added salt, it's not needed in this recipe. I used the pomegranate molasses recipe from this site as well, really easy with only 3 ingredients. Would be great as an appetizer, just making the eggplant slices smaller. Quite possibly one of the best recipes I have found on this site. Thank you!

Whipped Cauliflower

I have made this out of the South Beach Diet before and love this recipe. DH has asked for this several times. I am only giving it 4 stars because I would never put canola oil in it, there would be danger of turning this dish into soup. I have used margarine instead. I have also added a little dried garlic, chives, onion, and greek seasoning. This can be altered to fit whatever you usually make your mashed potatoes with.

Fresh Southern Peach Cobbler

I did not personally cook this one, but watched as DH did. He used fozen peaches and they came out just wonderful. I helped clean the bowl the peaches and sauce were in. But the topping kind of ruinned the desert for me. It came out like a whole cake on top of the peaches. He has made this recipe three times in the past month so he must love it but I have had better cobbler.

Cheesy Ham and Hash Brown Casserole

Awesome! Added 1 green bell pepper and 1 medium white onion diced. Also used 1 can cream of potato And 1 can cheddar cheese soup. DH gave his stamp of approval by going back for seconds.

Baked Pork Chops I

Great pork chop recipe. Made it exactly how the recipe is written exept I used two large pork chops instead of 6. There was enough sauce/gravy for the mashed potatoes. Also, I only needed to cook the pork chops in the oven for 40 minutes before adding the sauce.
