Cranberry Oat Cookies

Delicious! I made these today and they came out perfectly with the these changes: I increased the butter to 3/4 c., as I had made the Ocean Spray recipe previously which is very similar to this one and thought they were a little dry. I also added vanilla, as others suggested. I used 1 and 1/2 tsp. Lastly, my oven cooks on the hot side, and I found when I made the Ocean Spray recipe that the cookies got too brown on the bottom baking at 375 degrees, so I baked these cookies at 350 for 10 minutes and they came out just right. My college-age daughter really loves these, so I'm sending half of this batch back to school with her....will definitely make these again between now and Christmas!

Kate's Light n' Fluffy Buttermilk and Chocolate Chip Waffles

Great waffles! Texture was light and they tasted terrific. I chose this recipe partly because I had buttermilk in the fridge that I wanted to use up, so I did as another reviewer suggested and used 1/2 buttermilk and 1/2 skim milk for the milk and omitted the buttermilk powder. I also added a pinch of salt and a a little sugar, since I didn't use any chocolate chips. I made a 1/2 recipe, and was a little surprised that it was only enough for 2 full waffles in the waffle iron, when the recipe said it should have made 5. Only two of us eating breakfast, so not a problem, but makes me think the yield of 10 waffles in the original recipe must mean 10 squares, not 10 full waffles. Really good recipe, thanks for sharing!

Lemon Scones

These scones have a wonderful texture and taste, I will definitely make again. I made a few changes- I had buttermilk that I needed to use up, so I used it in place of the sour milk. I increased the sugar slightly to 1/3 cup and as others suggested, added 1 Tbsp. of lemon juice for a stronger lemon flavor. Lastly, I used a lemon glaze from another recipe after baking, combining 1 Tbsp. lemon juice, 1/2 tsp. of lemon peel and 1/2 c. confectioners sugar.
