Apple Cider Biscuits

Reviewed: Oct. 6, 2008
Great, easy recipe. Some members of our family are allergic to wheat, for the others we prefer to not use white flour. So I've made batches with whole wheat pastry flour, and also with spelt. Both were great.

Oatmeal Bread III

Reviewed: May 22, 2008
This is a nice alternative to rice bread. (gluten free diet). It is crumbly, but has a good taste. It is plain by itself, but good with jelly. I checked it at 40 min., and it was already done- 35 min. early. The recipe said the batter would be stiff. It was runny. So, I added flour until it was somewhat stiff. I did make a few minor changes to fit my diet, but I don't think the changes altered the recipe enough to cause the batter to be runny. I used rice milk instead of soy, extra brown rice flour to replace the soy flour, and agave nectar instead of honey.

Easy Whole Wheat Peanut Butter Cookies

Reviewed: May 14, 2008
My son just diagnosed with candida. I am on the search for cookies that can use whole wheat flour and no sugar. This worked great. I used whole grain pastry flour and used 3/4 c agave nectar in place of the honey and brown sugar. To compensate for these changes I used 1 2/3 c flour. My son loved them. I'll be making them again!

Red Skinned Potato Salad

Reviewed: May 6, 2008
Very good recipe. Not too time consuming to make, either. I used green onion instead of onion, out of personal preferance. Next time I may leave out the bacon.

Black Bean Chicken Salad

Reviewed: May 6, 2008
My husband and 4 year old son really liked this recipe. I thought it was just ok. It needed more "taste" I thought. The vinaigrette took longer than I anticipated- mincing 1/2 cup cilantro is time consuming!

Gluten-Free Irish Soda Bread

Reviewed: May 6, 2008
I have made this bread 2 times. I took the advice to cut down the cooking time to 30 min. both times. Both times the bottom was burnt, and top wasn't. This is not a problem with my oven. It had a strange taste, too.

Very good and easy. Due to food allergies I used rice milk instead of milk and agave nectar instead of honey. Very filling.

Creamy Broccoli Cabbage

Reviewed: Jan. 24, 2008
Good and easy. I steamed my cabbage and broccoli, but other than that I made it just as the recipe states. My kids weren't very fond of it. They love broccoli, but not served in that way. My husband and I enjoyed it.

Jalapeno Popper Spread

Reviewed: Jan. 24, 2008
I was expecting something great when I made this, but it is just ok. Very easy to make. I used the crockpot. I made it for a group of people, but the only person who seemed to enjoy it was my husband. It is very "heavy" and we tend to enjoy healthy food. Perhaps that is why we didn't like it as much as other reviewers did.

This is good, easy, healthy and very economical. I gave it just 4 stars because it is very good, but not great.

Great recipe. Very easy to make. I used it with salad, but I'm sure it would be great with chicken too.

T's Sweet Potato Fries

Reviewed: Jan. 12, 2008
These are ok. I had some great sweet potato fries at a restaurant once, and these are not anything like these. Cutting sweet potatoes is a lot of work. To me, they aren't worth all of the effort.

Egg Salad Sandwiches

Reviewed: Jan. 12, 2008
I've made egg salad sandwiches many times, and never used a recipe. I decided to try a recipe this time to make it even better. This one is really good. Although I really like dill, I halved the amount of dill just like the other "dill lovers" suggested in their reviews. I also halved the amount of mayo. I can't have onion (migraine trigger) and don't really like it anyway. I did add a tablespoon or 2 of dried chives, though.

Creamy Chicken Rice Soup

Reviewed: Jan. 8, 2008
My husband said that this is the best soup he has ever had. He said it could be served at a five star restaurant. It is very good, and easy to. The only changes I made were to make my own broth, use brown rice and for the milk I used half milk and half 1/2 and 1/2. The only reason I made that change was because I had half a container of 1/2 and 1/2 left over from a Christmas recipe, and I was low on milk. Next time I'll just use 2% milk.

Soft Oatmeal Cookies

Reviewed: Jan. 2, 2008
This is a great cookie recipe. Very soft cookie. Just the right amount of sweet/salt combination. Good brown sugar taste. I used half whole wheat flour, and I think I'll use all whole wheat flour next time.
