Baked Chicken

Very easy and very delicious. The only change I made was to substitute panko bread crumbs (what I had on hand) instead of crushed cornflakes. I only had about 10 minutes to let the chicken marinade, and it still was tasty. I used two large chicken breasts (1.7 pounds), pounded them down and cut them into 4 pieces. Even after that, they took 35-40 minutes to bake to the proper temperature. A tip I love: use a gallon sized Ziploc bag, add the breading (or cornflakes) and onion soup mix, shake it up really well, then add the chicken in to coat it. This is definitely a keeper, only next time, I'll try it with smaller pieces of chicken for faster cooking.

Make-Ahead Mashed Potatoes

Excellent! I followed the recipe exactly, except added a stick of butter and threw in the crock pot for 4 hours on low, instead of the oven (which was in use). Turned out perfectly, light and fluffy, and I got rave reviews from my family. Thanks for posting!

Roasted Garlic Bread

Good recipe, although I thought it had too much butter for my one loaf of french baguette. I only used one head of garlic, and I thought that was sufficient, although I'll definitely increase the amount of parmesan next time. Our broiler's broken, so I baked it at 350 for about 20 minutes, wrapped in a foil tent for about the first 10 minutes, then uncovered for the last 10. Next time, I'll increase the oven temperature; it was nice and soft in the center, but the crust needed a little more crisp.

Divine Summertime Chicken Sandwich

Yum! I took others' advice and rubbed thin chicken breasts with olive oil, minced garlic and dill, then grilled it. I used a 7-grain bread, buttered on one side and thrown on the grill for a few minutes while the chicken was cooling. I did cut down on the garlic to about 1-1/2 teaspoons between the chicken and the cream cheese spread. I only used about 3 teaspoons of dill total (I find a little goes a long way). Overall, fantastic recipe; I wouldn't have thought to put these ingredients together. Thanks!

Slow Cooker Beef Stew IV

This was pretty good. I followed the recipe as closely as possible. I didn't add as much onion, but increased the carrots. I also added some garlic powder to the stew. I wasn't crazy about the red wine flavor, so I'll probably sub broth next time.

Easy Quiche

This was incredibly good. I substituted Black Forest Ham lunchmeat for the cubed ham, because that's what I had on hand. Per others' reviews, I sauteed a little bit of onion and garlic, and cut the milk to 1-1/2 cups. It came out perfect! So yummy! Will definitely make this again.

Grilled Salmon II

I must admit, I have never liked Salmon and I don't like soy sauce. But my husband likes both, so I thought I'd try this. I followed the recipe exactly, except I left out the red pepper flakes and let it marinade for about 12 hours. It was really good! I would have liked to have seen it have more of the marinade flavor, so next time I'll try others' suggestions to wrap it in tin foil for most of the cooking time, then transfer it directly to the grill for the last few minutes. But this has been the best fish dinner I have made so far. Thank you!

Backyard BBQ Chicken

The chicken was moist and nicely cooked, and I loved the bbq flavor (used Sweet Baby Ray's). It really was a quick and easy meal to make. Although I liked the dish, I wasn't a fan of trying to scoop up the corn in the sauce. Maybe if it was half of an ear of corn on the cob, it may have been better. Next time, I'll try different vegetables, or maybe just cook them on the side.

Easy Stromboli

Wow, this was really good, and very easy to make. Per another reviewer's tip, I used parchment paper on the baking sheet, and there was no sogginess. I added onions and mushrooms, and it was a great meal. I don't know about 6 servings, though. My husband and I pretty much polished off the entire thing ourselves. :)

Cocktail Meatballs

Fantastic! I thought they were a little too sweet, but others strongly disagreed with me. :) I baked the meatballs from scratch, using Onion Soup Mix instead of the onion, and refrigerated them for a few hours. I then put them in the crockpot for about 2 hours on low. Next time, I'll try using precooked meatballs and let them simmer longer in the crockpot, but I will definitely be making this again!

No-Tomatoes-Required Italian Seasoned Stir Fry

We loved this dish! I used sunflower oil instead of vegetable oil, but other than that, followed the recipe exactly. This is a great busy weeknight recipe. My husband asked if we could move this recipe to the top of the rotating list of meals.

Roasted Beets 'n' Sweets

I was looking for a healthy option to cook sweet potatoes. This was excellent! Much better than I imagined it would be. My only change was to cut back the garlic powder to 1/2 tsp (but that's just to suit my taste; others might like the stronger flavor). I burnt the vegetables a bit, as I forgot to stir them 20 minutes in, but it still was good. Nice flavor.

Chicken Kabobs Mexicana

This was my first stab (pun intended) at kabobs, and it wasn't too bad. My husband liked it much better than I did; I found it slightly bland. I'll probably try this again, because it's so healthy. I just need to find the right side dish (we tried the salsa and warm tortillas; I didn't like it at all). I'll cut the zucchini thinner and make the chicken cubes smaller as well.

Baked Zucchini Chips

Finally! A recipe that makes me *like* zucchini! I took others' suggestions, cut the slices thinner, added garlic powder and left to cook about 20 minutes (flipped half-way through) to let them get a little crispier. Husband has been put on a restricted diet, and these are a great alternative to chips!

Easy Tuna Casserole

Wow, this is *really* good (I think I just ate half the casserole by myself). I added an extra can of tuna, and peas and mushrooms to make it slightly healthier, but stuck to the recipe other than that. Excellent! This is my new favorite tuna casserole recipe.

One-Dish Chicken, Vegetable and Rice Bake

Made exactly as is, except I used frozen broccoli/carrots/cauliflower mix and chicken tenderloins (what I had on hand). Delicious and SO EASY! It was a little on the salty side, so I might try reduced sodium cream of mushroom soup (if they make that), but otherwise leaving recipe as is. This will definitely be added to the dinner rotation.

Penne Pasta with Spinach and Bacon

Excellent dish! I subbed garlic and onion powders for the garlic (my stomach can't handle full-strength garlic). My husband didn't like the smell of it cooking, but devoured at least two full bowls, and then the left-overs. It was delicious!

Fresh Cucumber Salad

Excellent and so easy! I didn't have any fresh parsley or dill, so I cut up a small onion and added that. I didn't have time to let it set overnight, but it was still fantastic. Definitely a keeper!

Golden Chicken and Autumn Vegetables

I really screwed up making this dish (used bouillon cube in hot water for lack of chicken stock, no rosemary, forgot the onions till the end), and it still turned out pretty tasty! I took another's advice and seasoned the chicken first with s&p and garlic powder and browned it in sunflower oil instead of vegetable oil. Can't say I'd crave it, but I will certainly try it again (hopefully with ALL of the ingredients). A nice, light meal.
