Sesame Seared Tuna

Reviewed: Dec. 17, 2011
I followed others advice and decreased the oil and increased the honey. I actually let the tuna sit in all the marinade for a few hours (don't know if it really did anything). Before cooking I made a half batch of marinade for dipping and drizzling. I let the tuna sit for a bit to come up to temperature before cooking and then seared. I didn't time it, I just watched it like a hawk. I didn't turn my pan up all the way (read about burning the seeds) so it took a little longer...but it was Y U M M Y!!! I served it in thin slices over jasmine rice and then drizzled the sauce over the top. Will make again! No need to go out anymore.

Quinoa with Sweet Potato and Mushrooms

Reviewed: Jul. 4, 2010
This was my second attempt at quinoa and had a MUCH better outcome. I added only a dash of cyanne due to the kids. My kids picky kid, picked out the mushrooms and onion, but 3 year-old ate it up. My husband (who doesn't care for mushrooms) said that it was good. Would make again. Also, the pecans were a perfect addition...they are a must

Yum! This was my third attempt at making quinoa, the fist was a big flop, but this turned out great. I served this at a community party where another quinoa vegetable dish was served but people liked this better. A definate keeper!

I love this! I halved it b/c it made a ton! The halved recipe used 2 cookie sheets, when made as written I had to do two batches in the oven.

Baked Scallops

Reviewed: Jan. 9, 2009
The taste was good but the consistency was less than desireable. It was soggy. Could be my error, but husband who likes everything didn't like the texture.

Elaine's Sweet and Tangy Loose Beef BBQ

Reviewed: Jul. 26, 2008
This was good. I loved the sauce, but after making it for a group of people they said they liked pork better for BBQ. The sauce was nice and tangy and like others I used Heinz ketchup Kickers (it had tabasco sauce in it). It was really good. Next time I will try with pork instead.

I made this a few weeks ago for a group of friends. It was AWSOME!! There wasn't any left (I think my husband was dissapointed that there wasn't leftovers). After reading the reviews I used the shoulder-butt and Baby Rays BBQ sauce. Everyone loved it! SO EASY!!!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Jun. 18, 2008
I am very afraid of soup recipes. If I don't like it, my husband is going to have to eat it for a week! Not with this one!!! This was GREAT!! I went back for seconds. I am not a big fan of cilantro or chili powder, they can over-power a dish, but this was perfect! I can't wait to make again! Top with sour cream and shredded cheddar and it is like heaven in a bowl.
