Chicken and Biscuit Casserole

We really enjoyed this dish. I added canned corn and diced potatoes to the veggies and used frozen peas instead of canned. I also added poultry seasoning to the "soup" and shredded cheddar cheese to the biscuit mix, which I doubled. It was a bit of work, so I think next time I will make the soup portion in the crock pot and make the biscuits separate just before serving.

Deliciously Healthy Paleo Pancakes With Banana and Walnuts

My kids wanted pancakes as a bedtime snack, so I wanted a healthier version. This was perfect. My six year old made the batter (we halved it, but it still made more than a dozen pancakes) and we added about 1/2 cup of oats to help it hold together. I didn't have walnuts, but we added blueberries. I do agree that cooking longer on a lower heat is the way to go. The first batch fell apart, but the rest came out perfect once I adjusted the heat. We loved them and we will be making this again.

All-Day Apple Butter

My kids and I made this to go with our lesson on Johnny Appleseed. This was very simple and came out great! We doubled the cinnamon, added allspice and nutmeg and reduced the white sugar to 1.5c and added 1c of brown sugar. Our crock pot would not hold all 5.5lbs of chopped apples, so we were only able to get about 2.5 pints apple butter after all was said and done. It did take about 16 hours for the total cook time.

Egg in a Boat

I was looking for something simple to make for my kids' tea party and came across this recipe. I had never heard of this before, but my kids love eggs, so I went for it. We all enjoyed it very much. I did not precook my bread, but broke the egg right into the hole immediately, seasoned it with a bit of salt and pepper, then flipped the whole thing halfway through. Didn't have any issues with under/over cooked eggs nor burnt toast. Will be making this a lot more often!

Baked Chicken and Zucchini

This was an delicious, easy dish to make! Followed the directions exactly as written and it was amazing. Even my picky eaters (one of which HATES tomatoes!) ate everything on their plates. This recipe is a keeper!

Delicious Ham and Potato Soup

Tried this today for lunch and the whole family loved it. I made a double batch and added onion powder, garlic and celery seed in with the salt and pepper. I also added 2 cups of shredded cheddar cheese to the thickening sauce before combining it with the soup. Amazing. Will be making this again!

Slow Cooker Lasagna

We used our own recipe for the lasagna, but followed these directions for cooking it in the crock pot. After reading the reviews, we added extra water to our homemade sauce, used no boil noodles and made sure we had enough sauce to cover the top layer of noodles. Cooked on LOW for 4 hours, added cheese to the top and then cooked on HIGH for another 30 minutes until cheese was melted- It was perfect! We will be using this method again.

Homemade Pizza Supreme

For Pizza Dough Only: my kids wanted pizza for lunch and I didn't have a boxed mix on hand, so I tried this recipe based on the reviews. I followed the recipe exactly except for adding a tablespoon of dried Italian Seasoning and a tablespoon of Splenda to the dry ingredients...It came out fantastic!! I also did not pre-bake the crust and just cooked it at 450 for about 30 minutes. I will be trying the sauce the next time we plan to make pizza (I didn't have tomato sauce) but if its as good as the crust I will never buy jarred pizza sauce again. This recipe is a keeper and boxed pizza mixes will not be found in my pantry anymore!!
