Ginger Glazed Mahi Mahi

This is one of my favorite fish recipes. I have to admit I have only tried it with Mahi Mahi but I have no doubts it will work with other fish and chicken as she says. This recipe is so very easy to prepare. I have both grilled it and pan fried it but using Le Creuset skillet. You can't get a more even heat than from their cookware. No sticking whatsoever. I serve with a white rice and marinated grilled asparagus. A very filling meal.

Whitney's Egg Flower Soup

I like this recipe. For my taste I had to season it up a little more but all in all it's a very good recipe. I added more pepper, a bit of garlic salt more green onion and just a bit of diced (very small) carrots and doubled the peas. Once in the serving bowls just a dash of Huy Fong Foods Garlic Chili Sauce. This stuff is awesome! I was first introduced to it in one of my favorite Chinese restaurants. Can be bought at most groceries.

Chef John's Perfect Prime Rib

Tried this recipe for the first time for new years day dinner. Turned out perfect!! I did purchase a oven thermometer and checked the accuracy of my oven. My oven is over 23 years old and I had some concerns but to my surprise it was right on! My prime rib was 7.71 pounds so I cooked it for 40 minutes and shut it all off and continued like Chef John said for 2 more hours! Final results, perfection! I have never cooked a prime rib in the oven. I have always cooked it on my Farberware Rotisserie. I was a little concerned but everything went well. Next time though I will use the seasonings we are use to using and love some much. Instead of the Herbs de Provence I will use Quebec Steak Seasoning. That will be the only change. Once again thank you Chef John for another perfect recipe!!!

Quick and Easy Green Chile Chicken Enchilada Casserole

My family liked this rendition of chicken enchilada casserole. I would definitely recommend cooking the chicken ahead to save on time if you are in a hurry. That way you don't spend time waiting for it to cool so you can shred it before adding it to the rest of the ingredients. Had I had the chicken ahead of time I surely would have cooked it a day before. It was surely easy enough to make but I followed the video more so than the written recipe. I didn't char the tortillas before adding them I just tore them in to fourths and I used a Mexican blend of cheese instead of just a shredded Monterrey jack. I also topped with my favorite Daisy Sour Cream and ripe avocado slices. I had to cook it much longer than the recipe called for. My oven is pretty right on with AllRecipes.Com so I was a bit surprised. I ended up cooking the casserole 75 minutes as appose to 45 minutes. All in all this recipe is a keeper in my house.

Slow Cooker Pulled Pork

This recipe may not have all the bells and whistles or a tone of special ingredients but it is full of flavor and taste amazingly good. So simple to do and if you add a favorite BBQ sauce you won't be disappointed.I have shared this recipe with many family and friends and get lots of thank yous!!

French Fried Potatoes

I've been using Lorelei's recipe for awhile now and love it. So does my family and friends. No changes other than doubling it. The sugar makes it as far as I'm concerned. Thank you Lorelei.

Chef John's Banana Bread

Tasty banana bread! Everyone loved it. I used pecans instead of walnuts as my family can't eat walnuts. Still it was a delicious recipe. I also used butter which he calls for. I know many substitute margarine but for me I'll stick with the butter. Very most, flavorful and filling. I love John's recipe videos and have used many of them. This recipe also has a video. Makes it so much easier for me to follow.

Stuffed Cornish Hens

Oh my this recipe is divine!!!! The rice stuffing makes it so! This was so easy to pull off even a beginner could do it. I followed the stuffing part to a T. The only thing I did different was I garlic salted and peppered the hens and basted in real butter. It was mouth watering. Thank you Nancy for giving us such a wonderful recipe. I am going to steal the stuffing recipe and try it with pork. :))

Apple-Glazed Pork Chops

My family really liked this recipe. The pork chops were a bit over cooked but that was my fault. I added more time. I used thicker bone less chops and I have a fear of under cooking pork that I need to get over! This is a fairly easy recipe to pull off yet it taste very gourmet. The apples really made this recipe. I used Granny Smiths and the taste was fantastic. Family really loved it. Next time I will do my best to get over my fear of under cooking the pork chops and I'm sure this recipe will be perfect if I do. Also I served Creamy Au Gratin Potatoes By CathyM as my family loves these potatoes and for a veggie steamed broccoli with a cheese cream sauce. A lot of cheese I know. :/

Soft Oatmeal Cookies

A wonderful, some may say basic recipe but I have been trying to find a recipe to duplicate my husbands Mother's recipe for 30 years now! I found it! I add raisins (as did Mom) but I use organic very plump sweet Thompson raisins and they make all the difference when adding raisins to this great recipe. I make several batches at a time using a Kitchen Aid mixer, makes it so much easier and faster and then I roll them in to a cylinder shape much like the already made cookie dough you find at the market that you would slice and bake. Then I seal them and freeze. When my family wants cookies I simple take one out , defrost slice and bake. Easy and good!

Chef John's Gazpacho

After trying Chef John's Gazpacho a few days ago I have now pitched my own recipe of over 20 years! Yes folks it is true! You can teach an old dog new tricks or new recipes anyway. ;) I made no changes to it and my family and friends loved it! Gazpacho can be time consuming to make but John's isn't but 45 minutes and viewing his video to make it makes it all the more easy. Plus his voice is so relaxing to me! ;) The only thing I added was a cucumber slice and a dollop of Daisy Sour Cream to the top of each serving. Bon appetit!

Creamy Au Gratin Potatoes

I have been making this recipe as is for several years now and it's the only Au Gratin Potato recipe my family will eat! As is this is a five star recipe and very easy to make. Be sure to watch the video too if you are hesitant about adding the flour. I know many new cooks are afraid because they think it will just be lumpy but if you view the video it will ease your fears. Enjoy!

Tarragon Chicken Salad II

I like to rate recipes as published. Otherwise to me it's not really rating the recipe submitted. That being said I found this recipe to be very good as published. The tarragon really makes it. Such a nice favor yet not overbearing. The celery gives it a nice crunch and everything combined makes for a wonderful salad. I have served it many ways but my family likes it best served in a pita bread pocket. Add a nice homemade sangria wine and you have a wonderful light summer day lunch.

Tiramisu Layer Cake

I have made this recipe several times now without any changes.It's the best Tiramisu Cake recipe I have found.It's a bit time consuming at first with many steps but once you make it a couple of times it's a piece of cake! No pun intended!! Well maybe a little pun. :) Seriously please give it a try. My family now request it for all the special occasions, birthdays,holidays and my niece even asked me to make it for her wedding cake!
