Black Beans and Rice

yum! I added tomato paste while the rice and stuff was cooking. i also added a chipotle pepper chopped at the end. then i stuffed it into red bell peppers and roasted it. topped with a slice of chedder cheese during the last few minutes in the oven. good thank you.

Spinach and Leek White Bean Soup

wow. this one was great. i didn't put in the couscous, i just wasn't up for that at the moment. i through the spinach in the bowl and put the soup over it, with in like a minute the spinach was perfect. it was a wonderful dinner, and an even better breakfast! thanks!

Banana Banana Bread

yummmmmmy! all i did different was add a couple of spices to it, and i eyeballed the baking soda, thank god i have a good eyeball! made muffins instead of a loaf b/c of time. very good thank you! i did it and i am not a baker!

Coconut Tilapia with Apricot Dipping Sauce

good stuff! so, i battered coated created a bit of a mess, even with tongs. (but its all good, what a dish!) lightly pan fried for a second to get a nice little browness, and then baked for the remainder. for the sauce however, i didn't have all the ingredients on hand, so i whipped up a orange marmalade, cayanne, and red pepper flake concoction. i loved it, boyfriend loved it and baby woke up hungry due to the smell! thanx for a good one!

Oregon Salmon Patties

good stuff!!! I thought i had parsley,but didn't. I did however have cilantro, oh and what a great flavor contrast!!! the boyfriend was in heaven! no leftovers for us.

Savory Mushroom-Barley Soup

really good stuff! i used cremini mushies i also added garlic, and on the second warm up i added a little cayanne pepper to the mix for a little kick. the boyfriend asked if it would be bad for us if we just ate soup everyday! he loved it!

Beer Bread II

so I used Rogue Chipotle ale for the beer, chipotle cheese, and a med size can of green chiles. i used about a cup of cheese or a little more. didn't put the butter on top, figured the cheese had enough greese and oils to do the trick. i made a spread with some whipped cream cheese a small can of diced green chiles and about 2 oz of the left over chipotle cheese. it was wonderful!!! and really hard to wait for it to finnish cooking let alone giving it ANY time to cool down! great recipie! will be making often, since i work in a beer store the combinations will be endless!

Rainbow Veggie Chili

Very wonderful! first off i have never made a chili before, (and i don't like beans). I bought a cornbread mix a couple of weeks ago and realized i needed to do something with it and thought well chili would work, and thus i stumbled onto this. I doubled most all the veggies since i am a veggie. it made enough left-overs for my boyfriend and I to enjoy for three days! (he even had chili dogs, since he is a meat eatter.) I used chedder cheese, chopped green onions, and even sour cream as toppings! this is a regular for me now!
