About this Cook
I am a happy homemaker with two children (one boy, one girl) and a husband who makes me so happy I can fly. He has two grown children who I adore, one of which made me a grandma on July 30, 2010. I love to cook and bake - it is my time to breathe. It's one of the very few things in a person's every day life that you can see a beginning and a direct result in the end. Satisfaction every day!
My favorite things to cook
I love the ease of casseroles, one pot meals and crock pot cooking as well as stews/soups and grilling. Lately I've taken an interest in cheesecakes after baking a pumpkin cheesecake for Thanksgiving. I'm anxious to try many varities.
My favorite family cooking traditions
We have homemade pizza night when I put tons of toppings on the table and every one gets to dress their own pizza (flattened refrigerated biscuits). We have also implemented a monthly snack/movie night when everyone in the family picks a favorite snack-type food and we get to enjoy a little of everything while watching a movie together. Some favorites are pickle rolls w/ ham and cream cheese, pinwheels, mexi dip, little smokies, sausage stuffed jalapeno halves and homemade movie style popcorn. Oh, don't forget the root beer floats!
My cooking triumphs
I feel most successful when I get a WOW from my husband and/or kids. I still remember how it felt when my step-son told me my spaghetti sauce was better than his grandma's. We all know grandma's are the best cooks!
My cooking tragedies
I attempted my first homemade pumpkin pie for Thanksgiving 2007. We were traveling to Nebraska from Minnesota so I was in charge of the desserts. I wanted the pie to look perfect so I avoided checking the filling and boy was that a mistake! Outer done - inner NOT done. One mistake I will never make again! Checking if the pie is done and the marks it leaves is why whipped topping was invented, right?

Carla's Fruit Dip
As others suggested, I used 8 oz. of cream cheese, following the other ingredients as listed. It wasn't a huge hit with the family but I definitely liked it.

Banana Chocolate Chip Cookies
NOTE: I have a newer Kenmore Elite oven and I had to cut the temp down to 350 with a bake time of 10 mins. It is a convection oven BUT I did not use the convection setting and as written the temp and time is way off, atleast for my oven. I can understand why several reviewers have said the flavor was mild/bland if they followed the recipe as written. After reading many (not all - I didn't have tons of time before two kids were due off the bus and ready for a snack) reviews, I decided if I was making banana cookies, they had better taste like banana so I opted for 4 medium sized ripe bananas. I did cut the baking powder to 1 tsp as many suggested and for a little extra sweetness, I added some (about 1 tbsp) cinnamon and sugar I had mixed up for breakfast toast. What resulted is a yummy moist sweet disc of heaven! My personal opinion is as long as they can stay moist - bring on the cake like, muffin like, bread like cookies! To note: this recipe was so fast and easy, simple yet great flavors - the best kind of recipe a busy wife and mother needs! Thanks to the author!

Asian Lettuce Wraps
Oh HEAVEN! I honestly think I could have ate this whole dish. My favorite Asian dish is Spicy Szechuan Beef at Big Bowl and this sauce tasted exactly like the sauce on that dish. I'm thrilled to have found this and can't wait to add more and more to this base recipe to suit my current cravings. YUMMY!
