Stuffed Zucchini

I thought this was delicious but I did make quite a few changes. I didn't use any of the canned soup or tomatos. My husband is alergic to wheat so I also left out the bread crumbs. I did spoon on marinara sauce in leu of those ingredients and used both colby jack and parmesan cheese and I also used both zucchini and yellow squash. Very tasty!

Poblano Chile Pepper Soup

I make a version of this soup that is beyond DELICIOUS! I add crispy bacon, some cream cheese and I could eat this every day!!! Also, I sometimes add some potatoe flakes just to thicken it up. By itself it is not a thick soup but the flavor is amazing. Also, you can buy strips of frozen poblano peppers at my local walmart for very cheap which makes this super quick and easy!

Pineapple Chicken Delight

I will make this again, pretty tasty! I used chunk pineapple and probably would have added more than one can as I really liked the pineapple flavor. You definitely need to bake/parboil your potatoes. I microwaved mine a little thinking they would finish cooking with the rest of the ingredients but they were hard as a rock... we put them back in the oven for at least another hour. Hubby loved it, will make it again.

Raw Hummus

Okay, so you might have to work with this a bit but it is so worth it! I've made a lot of hummus and this is one of the best recipes (super extra points for me for being sprouted as it's healthier!). Definitely don't leave the sprouts too long or in too small a container or they'll ferment. Wash them at LEAST twice a day. I started in a food processor but it wasn't getting smooth. I poured it into the blender and added more water until it was blending smoothly. I also did a bit less lemon and a tad extra tahini. Letting it sit really gives a chance for the flavors to come together- even better the next day!

Coconut Macaroons

Amazingly delicious and simple! DON'T COOK ON WAX PAPER! :) They stuck really bad, what a mistake! I doubled the recipe (good thing!) but put half the amount of sugar. I added some extra coconut to make them a bit thicker and also did it gluten free substituting rice/tapioca/xatham for the regular flour. These are wonderful!

Bacon Wrapped Stuffed Mushrooms

I thought these were delicious. It's not a complex flavor but they were good enough for me to not be able to stop eating them even though I was full! We only needed 1/4 strip of bacon per mushroom and mixed colby-jack cheese in with the cream cheese instead of onions. YUM!

Holiday Cranberry Sauce

I made this with orange juice instead of water and about half as much sugar. Pretty good! Mine was a bit runny so I'd add less water/juice next time. ** Made it again this year for the second time with OJ and just the recommended water and it turned out great!

Citrus Garlic Shrimp

Kale and Adzuki Beans

This was really good!I wasn't a fan of kale but this changed my mind! It took a lot more water than suggested for the beans. I also added the spices to the oil so they got hot before adding garlic and other ingredients- suppose to make the flavor come out better. Delish, thanks for the recipe!

Slow Cooker Beef Stew I

Clone of a Cinnabon

These did not taste like a cinnabon. They were tasty cinnamon rolls and the icing was delish but don't call them a 'clone' when they aren't. One start just because they aren't what they said- but they are good!

Ground Beef Mexican Style

This was pretty good. We served over saffron rice (gluten intolerance) and I used green chiles instead of green peppers. Fresh tomatoes would definitely be better but all I had was canned. Being is easy to make is the best feature!

Yummy Sweet Potato Casserole

We make this GF by subbing half tapioca/half brown rice flour and it's a huge hit with everyone! I use about half as much sugar as the potatoes call for and we often substitute coconut milk and Earth Balance spread instead of butter. Just as delicious! A holiday fave!
