Marinated French Salad

This was pretty good. I did omit the onion due to personal preference, and made my own mustard dressing using mustard, oil, salt/pepper and garlic powder, but used the general idea of this recipe. Next time I wouldn't bother putting it on the lettuce bed, both me and my partner didn't bother eating the lettuce and ended up being a waste. I would probably omit the tomato as well, depending on my mood when I make it.

Savory Green Beans

This was great, and very easy to prepare. I reckon it could do with some extra pancetta, but other than that it's perfect. Oh, I also omitted the addl salt as it was not needed, just seasoned with pepper.

Veggie Potato Salad for a Crowd

This was good. Next time I will make a couple of changes by omitting the tomatoes and capers, and just using my own oil based dressing, but this is a good base to then play with and perfect your own style of potato salad.

Smoked Salmon Chowder

I loved this. This is my first real attempt at making a chowder, and I did change a couple of things due to personal preference. I use chicken bacon, low fat margarine, and 2% milk to cut back on the fat content, I also omitted the onion and celery, and used a fresh salmon fillet rather than smoked. When cooking I thought it was looking rather lumping, rather than chowdery, so mashed the veggies with a masher straight in the pot with the stock once the potatoes were done (before adding the roux). Loved it lots and will be making again.

Cabbage Rolls I

I didn't like this, not at all what I was expecting. I like cabbage, like ground beef, like rice, like tomatoes ... but this just didn't taste. I did however kinda like the meat filling, hence the 2 stars, but won't be making this again.

Broccoli, Corn, and Green Bean Saute

This was really tasty and fresh. Will be fun to experiment with different flavours of feta, and possibly some other types of cheeses to get different tastes. Quick and easy and will make again whenever I have some spare feta.

Fresh Veggie Bagel Sandwich

These were really tasty. I used wholemeal bagels, omitted the onion. and added beetroot. Veggies were so tasty didn't bother with the salt and pepper. Quick light meal when you need to boost your veggie intake for the day.

Rice and Ham Salad

This was ok, but wont be something I make again. Something wasn't quite right with the dressing. I like mayo as a dressing on its own, and also like french dressing on its own, but both of them together made for a weird taste. My boyfriend liked it, however I won't be making again.

Absolute Best Potato Casserole

This was really good. Only made a couple of changes, which was to omit the onion (personal preference), to divide the cheese sauce into two portions, one of which I poured over just the potato layer, and the other I poured over the top as per the recipe, and I used breadcrumbs instead of corn flakes. Was a little on the salty side due to the ham, so next time wont add any additional salt, but was tasty and will make again.

Scalloped Cabbage Casserole

I really liked this. The only change I made was t omit the onions (personal preference), and to mix about 3/4 of the cheese into the white sauce, and use the remaining cheese on the top layer. Makes a lovely side dish, will be making again.

Italian Riboletta Soup

I did not like this. The taste was semi-ok, but with uncooked potatoes, over cooked cabbage, and soggy bread, the texture of the soup ultimately stopped me picking at it and throwing the rest out. Sorry, won't be making again.

Kitchen Sink Soup

I liked this, and it's so versatile that you can use what ever veggies take your fancy. I made as is, and will make again with a couple of changes. I will cook the potatoes first, then when they are half done I will add the rest of the veggies for 10mins so they don't go too mushy. I would leave out the wax beans, use red bell pepper instead of green, and add more chickpeas and cauliflower. This is a delicious healthy soup, and will join my rotation :)

Emerald Green Risotto

I liked this. I did leave out the celery and zucchini (personal preference), and added extra broccoli and some carrot to make up for it. Will make again, but probably skip on adding the feta, as it is a nice vege risotto without it.

Leftover Ham and Vegetable Medley

This was pretty good. You do have to watch the amount of salt, would be best to use low sodium soy sauce in this recipe. Mine came out just ok, any more salt and I wouldn't have eaten it. Apart from this, it's a good recipe, and can easy adjust to use the veges you prefer.

Ham and Broccoli Strata

This was really good. The only things I would change is adding more ham and egg, and also having the broccoli mix topped with the egg, then have the layer of bread on top covered with additional cheese and then the paprika. My bread soaked up all the egg when it was in the middle and was a soggy texture, not the best to eat.

Salmon Broccoli Bake

This tastes great. I made it for dinner last night, and since I'm having a pot lunch at work, I put the extra into mini pastry pie bases (but with only 1 layer of broccoli/parmesan) to re-heat at work. Not the prettiest dish, but they sure taste good.
