Catfish Tuscany

Very, very good. The only changes I made was adding 1/4 cup bread crumbs to the cheese mixture and instead of putting the tomatoes on the fish I diced the Romas and put them in a small glass baking dish and added a little italian seasoning, minced garlic, salt and pepper and put them in the oven for the time I was broiling the fish, I stirred them occasionally and it made a very nice relish/sauce/salsa to put on the fish after the cheese mixture had broiled into a nice crusty covering. My 3 year old even ate all hers. My hubby says its a keeper!!! (He has been a semi-professional cook and baker for years so I always strive to meet his approval!) I think I will try it with a little feta or manchego cheese and dice some red onions into the tomato mixture next time. It could be amazing!!!

Creamy Rice Pudding

We love this recipe. I have always thought grinding my rice in a coffee grinder before making rice pudding makes it creamier and better. This recipe is especially good if you add ripe mango chunks over top before eating!

Old Fashioned Potato Salad

My hubby doesn't like mustard in his potato salad but he says this is a keeper. I didn't have pickle relish but did have some "end of the garden relish" so I added that and also about 3/4 cup peas. was pretty awesome!!!

Orange Honey Garlic Chicken

My husband says this is a keeper! I actually used apricot jam and nectar instead of OJ and added a 1/4 cup of rum, and 1/2 teaspoon of crushed red pepper, marinated it overnight and only baked for 1 hour and it turned out really, really good. I will try it with OJ next time but apricots were awesome too.

Blackberry Cobbler

I use this recipe but I use mixed berries instead of blackberries and I don't roll it out, I layer it in the pan with dough, berries, dough and it cuts the prep time in half and it's absolutely fabulous.
