Creolized Stuffed Chicken Breasts

Reviewed: Feb. 4, 2012
excellent! My husband and our guest raved about this. The only difference i did was make my own blue cheese dressing b/c I had all the ingredients on hand for it. This is a very heavy dish so I pared it simply with roasted broccoli.

Pork Chops with Blue Cheese Gravy

Reviewed: Jan. 26, 2012
Excellent. My husband and our houseguest raved about it. I served it with roasted Broccoli and roasted new potatoes. I used FF Half/Half instead of the Whipping Cream and it was perfect. This was my first time cooking Pork Chops and they turned out delicious!

Bacon-y Bok Choy

Reviewed: Jan. 25, 2012
Yummy! I too cooked the white parts first and then added the green after a few minutes. Great flavor! This was my first time cooking Bok Choy and we really enjoyed it.

Chicken Florentine Casserole

Reviewed: Jan. 19, 2012
Full of flavor. I too skipped the step of baking the chicken prior. I cooked the bacon then sauted the spiniach (one large bag) and mushrooms in the bacon fat. Layered the dish with the spinach, mushrooms then the chopped raw chicken (3 breasts) on top, sprinkled with the bacon (really added to the flavor and texture of this dish) cooked at 350 for 25 min then sprinkled the cheese and cooked an additional 10 min. I forgot to purchase the half and half. As a result my sauce came out way to thin but still full of flavor. Served with Angel Hair pasta. My husband and friend raved about it. Thank You!

Greek Chicken

Reviewed: Apr. 12, 2011
I followed the recipe to a T. I felt the chicken was quite dry and honestly the dish just did not wow me at all. The positive is that it was very quick and easy to make. Thank you for the recipe though!!

Ground Turkey Noodle Bake

Reviewed: Mar. 12, 2011
Making this dish I was very unsure about it, but when it was finished cooking and I took a bite I was sold! I used what I had on hand which was half a jar of Pasta sauce, red onion, almond milk, chive and onion c.c , whole wheat egg noodles and no parsley. I also boiled the noodles in the seasoning. I did not find it took a lot of time or a lot of dishes. Quite the opposite really! Very good dish!

Chicken Makhani (Indian Butter Chicken)

Reviewed: Jan. 25, 2011
My husband kept saying WOW! So this was definitely a hit! I too used fresh garlic and ginger b/c thats what I had on hand. I skipped the yogurt b/c honestly I forgot it and used FF half&half. I also made my own Garam Masala. I replaced the cornstarch with 1/4c ground cashews. I was also heavy handed when adding the spices. Oh and I also marinated the chicken in lemon juice. Next time I will marinate it in yogurt just for a change. Thank you for a delicious recipe that made my hubbs VERY happy :) **I blend the sauce before adding the chicken** I make this so much that I think next time I will add sliced peppers so we can get our veggie's in!-Update-This dish NEVER gets old. It is always amazing. Tonight I had no cashews on hand to grind so I followed recipe and still fabulous! LOVE IT! This will be in our family recipe box forever. I have still never added veggies :-)

Ten Minute Enchilada Sauce

Reviewed: Jan. 2, 2011
Absolutely delicious! I followed other reviewers advice and added chocolate. I thought it was very strange but it truly made the sauce perfect. Canned enchilada sauce is terrible and this sauce takes literally 10 minutes!! Thanks!

Spicy Chicken Enchiladas

Reviewed: Jan. 2, 2011
Absolutely delicious! I shredded some chicken breast because I do not like ground chicken. I also used the ten minute enchilada sauce from this website. (Make sure to add the chocolate with that recipe). Canned Enchilada sauce is not appealing to me. This is a fantastic recipe and will be used many times again. Thank you!

Blue Cheese and Asparagus Pizza

Reviewed: Oct. 11, 2010
i loved this! I used fresh dough and baked it prior to the toppings. My hubbs thought the blue cheese was WAY to much! I used 3/4c blue cheese and 1/4 cup feta. Blue cheese is very strong and we used the 'good' blue ;)

Jalapeno Chicken II

Reviewed: Sep. 28, 2010
I marinated and pounded the chix as per recipe. I deseeded one whole jalapeno per chix breast. Stuffed it with the Cream cheese and rolled the whole Jalapeno into the chix. Wrapped 3 slices of bacon around each chix and placed in oven 400 for 25 min. I loved the crunch of the jalapeno but my husband said he would prefer the Jalapeno to be cooked a little prior. It also was surprisingly only mildly spicy. Will definitely make again!

Spinach Enchiladas

Reviewed: Apr. 27, 2010
AS is the recipe is a 2-3 star but if I tweak it then it is a 4-5 star. I add saute onion, 2 packages of spinach LOTS of spices, 4 cloves garlic and 2 chopped Jalapeno peppers. I also use tofutti sour cream to reduce the fat content. Oh I also add a can of organic spicy black beans. Serve with homemade Margaritas! SO very filling you don't need any side. Update** made my own enchilada sauce from this site and it was amazing!!!! Way better than the can and so easy!

I give this a four cause I made some exactly as the recipe stated and some with added cheese and of course the cheese ones turned out much better. They just cook better. I stuffed my own jalapeno olives. The spicy was perfect.
