About this Cook
I don't really like fruit (except berries) and chocolate doesn't really interest me (unless it's got peanut butter attached). But I LOVE CUPCAKES and though I do like to cook desserts from scratch, I admit the boxed brownies are the best ones! ha ha...
My favorite things to cook
Fajitas! Hot and spicy foods! Lasagna! Tacos! CUPCAKES!
My favorite family cooking traditions
My mom's meatloaf is the best. Steamer clams and lobsters are what we eat in summer. Veggies from the garden and definitely green bean casserole on Thanksgiving. Introduced my kiwi mates to sweet potatoes with brown sugar, OJ, and pecans to RAVE reviews. :) Yum! And though you can't get good pizza outside of NY, you can get bagels - but you have to travel all the way to Aotearoa!
My cooking triumphs
Triumphs? Pulling off a perfect Thanksgiving abroad for 15 guests. Biggest turkey in NZ was 8.75kg (like 20 pounds). It *just* fit into my oven.
My cooking tragedies
I still can't get my mom's chocolate chip cookies right!

Amish White Bread
It was tasty, but it didn't rise much at all. Probably would make again with less sugar. Not living in the states anymore, I'm not used to sandwich bread being this sweet, so I just dunked it in my coffee since it was so flat anyway. But it did taste nice so it gets 4/5.

Chocolate Cheese Frosting
YUM! Perfect frosting. Frosted the Mafioso Chocolate Cake with this one. Fantastic!

Mafioso Chocolate Cake
The first time I made this cake I noticed 3 eggs sitting on the countertop as I bant to put the cake inthe oven. OOPS! Anyway, it was hard to scarpe out of the pan, but iced with a chocolate and cream cheese frosting, it was the best cake I've ever had. My egg-allergic friend was very excited. Next time I used one of the eggs to hold it together a bit better, and it has a slightly brownie-ish consistency. Yes! The best chocolate cake EVER. :) I haven't used the icing included in the recipe.
