Apple Butter Pumpkin Pie

I've never been a fan of the taste and texture of traditional pumpkin pie. But, my family loves them so I always end up making a few around the holidays. I tried this pie and it's the only pumpkin pie recipe I have liked!

Cranberry Bars

Tastes a little too "cake-y" for me. Will probably work on trying this without the cake mix next time. LOVE the tart cranberries and their bright color!

Caramel Filled Chocolate Cookies

I will make these again, for sure. I used mini Rolos so I didn't get too much of the caramel flavor I was looking for. Per others recommendations, I also added some extra cocoa and white sugar. I did grind some sea salt on top of the cookies as they came out of the oven too. YUM!

Caramel Shortbread Squares

HUGE hit for my holiday cookie extravaganza. Make sure to let them cool completely before cutting, so much easier! Next time, I will probably stick the shortbread batter back in the fridge for a few minutes before pressing into the pan. Makes the butter a little easier to work.

Spinach Brownies

These are a huge hit! I made them for every gathering over the holidays and now folks are asking for them again. I serve them with Green Tabasco sauce which works really well together!

Ranch-Style Thighs

Very easy! Added about 2 tsp dried pesto seasoning to the breading. I used buttermilk ranch and it was perfect. Leftovers were tasty too. Will definitely make this again and play with breading ingredients. Update (5/2014): Add some hot sauce to the ranch. Just a few drops of green Tabasco was perfect!

Chewy Chocolate Chip Oatmeal Cookies

This has been a staple of my holiday cookie gifts for several years now. I am not a fan of walnuts so I added more chocolate chips. Next time, I'll try a combination of chocolate and butterscotch chips. I make my batter and chill it before baking. I also try to remember to get it back in the fridge in between batches to keep it chilled.

Apple Crumble Pie

Great, very easy pie to make! I made this the first time because I had some apples and an extra pie crust that I needed to use up. It became the star dessert of the holiday season! I did use some of the suggestions of others. I mixed the apples with a couple tablespoons of flour, a 1/4 cup white sugar, a 1/4 cup brown sugar and some cinnamon in a bowl before adding to the pie crust. I also added a few squirts from the plastic lemon to the apple mixture to prevent too much discoloring. (Be careful! One time I could tell there was too much lemon but no one else seemed to notice.) I added slivered almonds to the crumble mixture and they browned nicely. Finally, I baked at 350 degrees for about an hour. The best pie results came when I used a mixture of four small different apples. The taste was full of apple flavor but everyone commented on the the sauce in the pie too. When I used more apples and mostly McIntosh, it did not get the same accolades.

Cottage Pudding - Upside Down Cake

Very easy and a great way to use the local apples that are in season. I used 1/4 cup of unsalted butter in place of shortening and reduced the sugar to 3/4 cup. Next time, I may add some nuts and cinnamon in with the apple topping. Might also try adding a little apple butter to the cake mixture. Addition: I have used 1/3 cup applesauce in place of an egg for this recipe which makes the cake incredibly moist and adds a little more apple flavor. I have also used 1/3 cup of pearsauce from Trader Joe's which was AMAZING!

Erin's Indonesian Chicken

This was great! It was quick and easy to make even though I had every stove eye on at one point. I used crunchy peanut butter and I liked having some peanuts mixed in with the sauce. The sauce also had a nice spice to it.

Black Bean Lasagna II

Delicious! Can't wait to have it for leftovers all week. You better like cilantro if you use all the recipe requires (I happen to love it)! Might also try some fresh lime juice in the bean mixture for an extra kick. Also, make sure to let stand (and set) before cutting.
