Hawaiian Plantation Iced Tea

Reviewed: May 23, 2009
Hmm.. I trippled the recipe for a huge party and made it using the "sun tea" brewing method (i.e. not using the direct-boil method). This amounted a much weaker tea than expected. Sad. Looked promising but I will try a more flexible recipe.

Slovak Sauerkraut Christmas Soup

Reviewed: Jan. 3, 2011
Made it for a Christmas party. Very divergent opinions. Some Russian friends felt it was really spicy (???) others loved it. I think spicy actually meant too "paprilkay" but who knows. Here is my opinion: Disgusting combination of sauerkraut and pork led to a greasy soup that was also very very - yes - sour. It was thoroughly unpleasant, making a fair number of people sick. In the end a lot of wasted money on specialty ingredients. Would have been better off with borscht or something similar. Try it at a restaurant first.

Sangria! Sangria!

Reviewed: May 22, 2009
Awesome, if dangerous recipe. Have made it successfully many many times. 1) I recommend using orange curacao - I settle on this after experimenting with triple sec and others but invariably this provides the smoothest, richest flavor. 2) A raw cane sugar * lemon juice combo can easily be substituted for the lemonade concentrate (which is afterall just a shortcut). 3) I find a merlot is the best choice for a deeper flavor. 4) Make sure it is well chilled and all the fruit nice and alcoholic!

Spanish-Style Quinoa

Reviewed: Jan. 12, 2011
First: this is the best Quinoa I have ever had - not your typical "hippie tabbouleh" style. Second: I added a couple threads safron, salsa as recommended below, and substituted one can 14.5oz diced tomatoes (half liquid drained) for tomato sauce. Third: omitted green pepper just cause I didn't have it. Outcome: Awesomeo! Conclusion: Safron = the secret.

Cedar Plank Salmon

Reviewed: May 25, 2009
Excellent recipe - everyone loved it. Added in all the optional ingredients (which I don't think are actually optional for this recipe). Grilled the salmon with cedar planks soaked in water with soy and lemon juice overnight. Note that the success of the recipe will depend largely on the quality of the cut you get. I recommend getting a slightly less fatty and very "dense" steak. As others noted, the sauce is not a marinade it is to dribble on at time of cooking.

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Jun. 30, 2008
I am giving this an "average" review. Salt is usually the number one ingredient in Cajun seasoning. No need to add more. The sauce was okay. Everyone ate the meal but I wouldn't say they loved it and begged for more. Perhaps use a paprika seasoning instead of Cajun or at least a homemade Cajun seasoning?

Original Nestle® Toll House® Chocolate Chip Cookies

Reviewed: Oct. 30, 2009
Best cookie recipe ever. You can modify easily. I recommend keeping the brown/white sugar ratio and slightly thawing the butter. Note in the original recipe the nuts are optional but they are better with. You can also use this with mm's and even cut in oatmeal. Also, the type of baking sheet will influence taste for better or worse.

Peruvian Chicken Soup (Aguadito de Pollo)

Reviewed: Oct. 24, 2009
This is the second time making the recipe - first was great. I'm making it for my 5 year old's bd so I am halving or less the seranos. I'll post again on how it went over. Also, to someone below, consider that you are not cooking chicken 1/2s, but you are halving 1/2s - could you have purchased whole chicken breasts? Also, crosshatching the breast will let the flavours enter and allow the chicken to dissolve into the stock a bit better.

Spiced Sweet Roasted Red Pepper Hummus

Reviewed: Sep. 26, 2008
Made a double batch based on reviews. Also included basil from one of the other recipes. Seemed good up until I added the cayenne which made it come out so hot it was almost inedible. 2 stars. Perhaps almost no cayenne and some olive oil.

Vegetarian Tortilla Soup

Reviewed: Jun. 23, 2008
The recipe came out okay. A little bit too bland, watery. I recommend not using oily chips as they seem to disintegrate a bit differently. Also go easy on the cheese and add in some black beans, other veggies. **As an aside, and I'd like to hear differently if this is not the case, this recipe did not taste very authentic. I have eaten the soup in Mexico and New Mexico. Both were very different.

Spanish Moroccan Fish

Reviewed: Jan. 23, 2008
Made this last night with 3.5 pounds fish, double, double the vegies (except the red peper which stayed the same), 1 cup raisins, 1 cup olives, 3 cans chopped tomatoes and half the spices (for the three year old). I left out the salt and let people add it as they wished. It worked great and my son loved it. Keeping the spices as-is in the recipe would be quite nice as well. Also: I had access to some really nice sweet Spanish paprika which really enhanced the flavor.

Mediocre - could be done much better if done from scratch (use independent ingredients instead of salsa as a shortcut).
