Best Ever Beef Marinade

Reviewed: Jan. 4, 2014
This was a great all purpose marinade. I used it for kebobs I'd cut from a lowly chuck roast and let them marinate all day before Mr. LTH grilled them to perfection. Great flavor, tender, and really made a chuck roast pop w/out having to slow cook it. THANKS for the recipe! The only changes I made were to 1/2 the recipe and replaced dijon w/yellow, per personal preference.

New Potatoes with Roasted Garlic Vinaigrette

Reviewed: Dec. 17, 2013
These were good. I'd built them up a little more in my head w/the roasted garlic vinaigrette, but they were just good. I used elephant garlic as it's what our grocery store had (and I assumed it'd have a stronger garlic flavor, actually) and yellow mustard per personal preference. I also cubed my potatoes for a shorter bake time. If I made these again, I think I'd use butter in place of oil and dry mustard in the vinaigrette. These are definitely worth trying and tweaking to your own personal tastes. THANKS for the recipe!

Creamy Potato and Corn Soup

Reviewed: Dec. 16, 2013
This was easy enough to throw together after working late AND it tasted good, too. The texture through me off a bit, with the corn "skins?". I think I'd puree and THEN add the corn. I used beef stock in place of beef base and water. This would be easily customizable for personal taste, too. The red pepper added a nice heat. THANKS for the recipe!

Italian Sausage Frittata

Reviewed: Oct. 31, 2013
I was not a fan, but Mr. LTH like it, so 4 stars it is (I'm not a fan of sausage). Time got away from me, so I used steamable veggies (nuked for just 3 min) and pre browned ground sausage and tossed everything with beaten eggs in a pie pan and left them in the frig overnight for breakfast. The next morning, I baked for about 40 minutes at 350. The sausage and basil were overwhelming to me (fresh basil would be better), but I did like getting veggies at breakfast. THANKS for the recipe!

Johnsonville Easy Sausage Pizza

Reviewed: Oct. 30, 2013
Mr. LTH deemed this the "best pizza ever". That may not sound like high praise, but I make homemade pizza more than 50 times a year, with a lot of variations. I made this w/homemade crust (Jay's Signature Pizza Crust from this site), homemade sauce (Exquisite Pizza Sauce from this site), and Kraft (R) Pizza Cheese, shredded cheddar, and fresh mozzarella. I pre cooked my ground sausage to avoid greasiness and I still found the crust to be a bit limp as a result. I baked at 550 for 6 minutes on bottom rack and another 6 on the top. I'm decidedly NOT a sausage enthusiast and I enjoyed this, too, though not as much as Mr. LTH. THANKS for the recipe!

Morning Terrace Pizza

Reviewed: Oct. 30, 2013
I must admit, I was dreading making these pizzas, because of my general apathy towards eggs. However, I was tasked w/making Johnsonville recipes and was pleasantly surprised with this outcome; these are DELICIOUS!!! I made as written, though I did add a bit of fresh mozzarella that needed using and used precooked ground sausage in place of links. Our grocery store also stopped carrying fontina, so I used fresh grated asiago in it's place. From a sausage AND egg hater, these are great! I'm looking forward to making these for breakfast the next time we have overnight guests. THANKS for the recipe!

Cheeseburger Muffins

Reviewed: Oct. 22, 2013
These are tough for me to rate, as they were really dry (Mr. LTH even commented on how dry they were, which is rare). They had a nice flavor, but I think they'd be better w/more meat or perhaps the meat cooked in the muffin to add a little moisture. That being said, I DO think these would be a hit w/kiddos and are quick and easy to throw together. They took close to 30 minutes in our oven to be set. THANKS for the recipe (and for the review update; I DID forget the cheese when I was reading directions, even though I'd ready your review...I was able to simply pull the mixture and mix it in before I baked them).

Buffalo Chicken Stuffed Shells

Reviewed: Oct. 21, 2013
I chose to prep these a day ahead of time for an easy Monday night dinner (I let them come to room temp on the counter while the oven preheated, and then baked them just a tad longer to heat through). These were easy to make, though I did have more shells than filling, so I'd rec boiling 1/2 a box of shells. Despite using regular "Frank's (R)", these were a bit too warm for Mr. LTH, but I found the heat to be quite mild. I wasn't a big fan of the chicken chunks (but I don't really love chicken, anyway), so I think I'd prefer them w/shredded chicken (BLSL). I agree w/the submitter that these would make a nice party appetizer! I was concerned about the lack of a sauce and that the shells would harden/turn rubbery, but I worried for naught! THANKS for the recipe!

Green Beans Kids are Sure to Eat

Reviewed: Oct. 20, 2013
These were good. Like Sarah Jo, I used frozen whole green beans because I'm just not a fan of canned. These were a quick veggies side w/out a lot of bells and whistles (or added calories). THANKS for the recipe!

Parmesan-Crusted Au Gratin Potatoes and Onion

Reviewed: Oct. 20, 2013
DELICIOUS! I followed the recipe to a "T", other than 1/2ing it and making it in an 8" square pan (I also forgot to add the parsley and used 2% milk...ok, but I was CLOSE to recipe ;) ). This is rich and delightful. While I won't make it often because it's so calorie laden, it was delicious. I wasn't sure about the onions, but they really made it (be sure to use sweet onions). I think this sauce would also make an excellent white sauce for mac and cheese! THANKS for the recipe!

Amazing Marinade

Reviewed: Oct. 20, 2013
This is a really nice marinade. It won't replace our "go to", which is the standard for earning 5 stars, but it is a solid 4 star marinade (and, who knows, it may be a 5 star in YOUR world)!. We used it on a NY Strip and 2 small filets Mr. LTH grilled. I omitted the celery salt per personal preference and realized we were out of sage, so that was left out, too. Our meat marinated about 5 hours and that was enough time to impart plenty of flavor. THANKS for the recipe!

Potato and Cheese Breakfast Casserole

Reviewed: Oct. 14, 2013
This gets 5 stars from me since I don't even care for sausage and I went back for me! I prepped it a day ahead of time and kept in the frig. I forgot to include the onion/spices when I browned the sausage, so I added the onion over the sausage when assembling and mixed 1/2 the spices in the eggs and sprinkled the other 1/2 over the sausage. I left it on the counter while the oven preheated and then baked for 45 minutes. I was a little apprehensive about 2 T and 1 T of spices, but they worked! I couldn't find ground sausage, so I decased a package of Johnsonville Mild Sausage and used that. I can see this finding a place in our breakfast casserole rotations. THANKS for the recipe!

Primo Pasta Salad

Reviewed: Oct. 13, 2013
This was a nice pasta salad. I skipped the olives and artichokes per personal preference, and the eggs because I'm lazy ;) I thought it might pack a bit more of a punch given the dressing ingredients, but nothing really made it stand out from the usual pasta salad fare. It's a nice pasta salad, for sure, but not one I can say for sure I'd make again (though it's certainly worth YOU giving it a try; it's good stuff!). THANKS for the recipe!

Tuppakaka

Reviewed: Oct. 13, 2013
I'm in love! The only tweak I made was to add a bit of almond extract (and I do think that does make a nice added punch). This was quickly thrown together with staple pantry ingredients and WILL be my new last minute company dessert go to. It would also be a delightful sweet brunch side. I love it. THANKS for the recipe!

Peanut Butter Crunch Cookies

Reviewed: Oct. 13, 2013
These were an easy to throw together nice tasting cookie, but not something I'd buy Crunch (R) bars again to make. However, if I had Crunch (R) bars needing using, I may make these. If I'd make these again, I'd increase the PB (double). THANKS for the recipe!

Chocolate Oatmeal Brownies

Reviewed: Oct. 13, 2013
These were good, but I think "brownie" threw me off a bit. I was expecting a decadent chocolate/cinnamon delight, but it's more like an oatmeal raisin (w/out the raisin) cookie bar than a brownie. Interesting change of pace, but not sure I'd make them again. THANKS for the recipe!

Summer Corn Dip

Reviewed: Oct. 13, 2013
This was a nice different "dip" that worked well for our dairy free friends! I followed the advice of a prior reviewer and subbed a can of Rotel for the tomato/chillies with great success. THANKS for the recipe!

Garlic Cheese Logs

Reviewed: Oct. 13, 2013
Skipped the pecans and added worchestershire sauce. Great standard cheese "ball" recipe. In fact, if I make this again, I'd prefer it shaped as a ball, rather than the loaf. THANKS for the recipe!

Mississippi Six

Reviewed: Oct. 13, 2013
This is a keeper! The name is odd and doesn't convey what guests may be eating, but it tastes great! I prepped it ahead of time and kept the "guts" in the frig until party time. Then, I added to the bowl, wrapped, and baked. Delicious! THANKS for the recipe!

Slow Cooker Egg Brunch Casserole

Reviewed: Oct. 13, 2013
This was really good! I used cooked ham in place of bacon and forewent the saute with the peppers/onion. I was not sure how this would work in the crock pot, but it worked! the texture was a bit different that you'd get in the oven, but not bad, merely different. While this isn't my *favorite* breakfast casserole, it is yummy enough that I'll make again because it's so easy to throw together the night before when we've got overnight guests. THANKS for the recipe!
