About this Cook
I like to eat and I tend to be a picky eater, therefor, I like to cook so I can be in control of what I eat. Thankfully, Mr. LTH eats everything and anything (except sweet potatoes and vinegar).
My favorite things to cook
I'm a very mood dependent cook: what I'm in the mood for dictates what I like to cook. I've found I really enjoy making new "faceless" recipes and adding a face to them.

I consider everything that comes out of our kitchen and people enjoy/eat to be a triumph...

Underbaked cakes + wire racks + oven to "finish cooking" = a very messy oven

French Toast Pancakes
I have to admit, I was a bit skeptical as I read this recipe as to how it would taste like french toast with a "dash' of cinnamon and vanilla. While it's a bit of a stretch, there were definitely bites reminiscent of french toast (though, I did add a health "dash" of both cinnamon and vanilla and skipped the nutmeg). They had a nice cinnamon-y taste. This made 2 large pancakes and 2 medium sized pancakes. For my second pancake, I added some chocolate chips as I'm a big cinnamon/chocolate fan. That was nice, too. Tomato-Cream (Vodka) Sauce for Pasta
Disclaimer: I've never had a vodka sauce, so I've nothing to compare this to. That being said, I didn't really find this any different than a pomodoro-type sauce, which doesn't have the added calories from butter/milk. I enjoyed this, but I can't see making it again, simply because the butter/milk didn't convey any additional richness to make it worth the extra calories. I added some onion to the garlic and uses a heaping tsp of garlic, as opposed to "3/4 of clove". I, too, added a pinch of crushed red pepper for a little heat. THANKS for the recipe!

Awesome Smashed Red Potatoes
Mr. LTH, the potato connoisseur at our house, deemed these "delicious", without prompting. I'd prefer them with a little roasted garlic and a good amount of sea salt, but enjoyed them, too. I just can't make myself use Velveeta, so I used real shredded cheddar in its place. THANKS for the recipe!
