Pointless Ramblings of a Verbose Cook w/a Loooong List of Food Aversions...

Sometimes I just need a little push...

Part of this month's challenge as an Allrecipes Brand Ambassador was to cook using (provided) GOYA products.  Now, I've seen GOYA in grocery stores everywhere I've ever lived, but have NEVER bought/used any of their products.  There's no reason for the unintended slight; I've just never made anything that called for a specific GOYA product.  

As I scanned the GOYA recipes collection, several piqued my interest.  August is back to school month, so I purposefully chose "easy" recipes as I fully intended to savor every last moment of laziness before it was back to the grind time.

The first recipe I tried was this:<
This was a solid 4 stars in our world.  There are a LOT of Black Bean Salsa recipes out there and this one, while fine, will not become my go to.  If I made it again, I'd back off the cumin a bit.

We just so happened to have some filets of beef in our freezer screaming to be used, so this became GOYA recipe #2:;evt19=1<
This earned a solid 5 stars from the LTH's!  My favorite part is it doesn't involve an all day marinade.  We have a favorite steak marinade for Delmonico's, but it doesn't cut it at the last minute.  These filets had great flavor w/out needing to plan quite so far in advance.  However, I cannot make myself pan fry a steak, so Mr. LTH grilled ours, instead.  He put a pat of butter on each to melt as they cooked.  I nuked butter/garlic/parsley to top the steaks at service.  Butter...beef...add a beer and the trifecta's complete!  (And we've already made/eaten these a second time this month...not that it's difficult to convince us to eat steak, but it's rare for me to repeat recipe!)

The final GOYA recipe was a bit outside our usual fare:<
Another 5 star recipe from GOYA!  To underscore how easy this was, I made it for dinner after my first (long) day back at work.  (Disclaimer:  I always do whatever prep work I can for the week ahead of time, so the peppers/onions were chopped, as were the tomatoes.  I also keep already grilled shredded chicken breast in our freezer and used that, too.)  Not only did we enjoy it, but my brother-in-law requested my sister make it after seeing our dinner on FB!  This will be repeated at the LTH household, particularly w/our garden teeming with tomatoes and bell peppers!

This month's experience is exactly why I love being an Allrecipes Brand Ambassador; I'd have never tried these recipes/products w/out the push in this directions.  

(The opinions expressed above are mine and mine alone, because nobody's the boss of me.  GOYA provided products used to create the above recipes.  And a pancake turner ---which is not the same as a spatula as I learned in 7th Grade Home Ec.  However, my taste buds can't be bought w/a pancake turner, so rest assured my opinions are the real deal.)

About Me

Underbaked cakes + wire racks + oven to "finish cooking" = a very messy oven
