About this Cook
I like to eat and I tend to be a picky eater, therefor, I like to cook so I can be in control of what I eat. Thankfully, Mr. LTH eats everything and anything (except sweet potatoes and vinegar).
My favorite things to cook
I'm a very mood dependent cook: what I'm in the mood for dictates what I like to cook. I've found I really enjoy making new "faceless" recipes and adding a face to them.
My cooking triumphs
I consider everything that comes out of our kitchen and people enjoy/eat to be a triumph...
My cooking tragedies
Underbaked cakes + wire racks + oven to "finish cooking" = a very messy oven

Beefy Italian Ramen Skillet
This is a tough one to rate and I waver between 3-4 stars. I opted to go with 4, because we liked it, for what it was. It's not going to knock your socks off with flavor, or impress company, but it is a great budget friendly way to stretch a pound (or even half pound) of ground beef with pantry staples (if your pantry has Ramen) and an aging bell pepper. If you've got some Ramen you're looking to use, this is definitely worth a try. THANKS for the recipe!

Swiss Cheese and Bacon Scalloped Potatoes
These were good, and easy enough to toss together on a weeknight, but I was hoping for a little more of a rich/cheesy flavor. I really enjoyed the onion and left out the bacon when I realized we were out as I was prepping dinner. THANKS for the recipe!

Chef John's Shrimp Fra Diavolo
This was really good AND easily came together after a late night at work. I chose to serve it over some linguini. We liked it, but I think I'd use a little EVOO in the pan for cooking the shrimp (if not using cast iron). I realized we didn't have any white wine, so I subbed a merlot and I subbed dried parsley for fresh. THANKS for another well explained recipe, Chef John!
