Pear Pie III

This is a fantastic recipe. I used brown sugar in the custard and it had a rich, delicious color and flavor. Sprinkle the tops with a little cinnamon/brown sugar and add ground nutmeg to the pears. Delicious!

Four Egg Yellow Cake

Wow. Truly deserving of a 5 star rating. Quartered the recipe to match the amount of sugar I had and made 8 cupcakes. They were so delicious. No frosting necessary. Very pleased.

Easy Sour Cream Cheesecake

This recipe is perfect. It has now become my default cheesecake. It baked beautifully and only had 2 tiny faults. It held firm but was still creamy, and absolutely delicious. I used a graham cracker crust but will try others. I hope it can also be "tampered" with by adding other flavors without jeopardizing the body of the cake. Delicious!

Johnny's Spice Rub

I was very hesitant about this recipe because I was missing mustard powder, chili powder, brown sugar and paprika. I used 1 tsp of cayenne to substitue for the heat of the chili powder and paprika and was afraid it would be too hot. I basted in mustard to sub for the powder and it helped the seasoning to stick, and I just used white sugar instead of brown. To my surprise, I got fantastic reviews. If this was good missing those ingredients, I'm assuming it'd be good when done correctly. I have to give it 5 stars for the praise it got me! The smoky cumin taste was a plus.

Oatmeal Raisin Cookies I

These are spectacular and highly addicting. I found them to be too sweet however. They also had trouble holding but I will experiment with cookie size, and baking time. Great recipe!

Spicy Chicken and Cilantro Wontons

Absolutely perfect! Tasted like an authentic egg roll. All the flavors came through and there was no overpowering salty taste like soy sauce fillings. This is the only way to go.

Whole Wheat Banana Nut Bread

Definitely a good bread but I'm unsure that it has enough banana flavor. I used 3 bananas and the flavor did not shine through as much as I would like. Added a 1/2 cup of PB for flavor and made a "topping" of 1/2 cup pecans and 2 tbl. butter. I flipped it over and layered my two 9" "bread cakes" almost like an upside down cake. Drizzled with chocolate sauce and was tasty. Replaced oil with applesauce and used 1/4 c honey and 1/4 cup light pancake syrup. Glad I found a recipe that didn't directly use sugar! Very nice.

Strawberry Pie II

This is a winner. Can be too sweet if you're not careful w/the the sugar but very very good regardless. Try pureeing the mashed mixture for a smoother pie. I am also going to try to play around with other crusts (graham cracker or cake) and try layering this (cheesecake, mousse, etc.) Delicious!

Blueberry Coffee Cake II

This cake is not very sweet @ all. It is delicious however when you add the topping. Considering the cake was meant to be eaten with the topping, I think it is superb. Very happy I could replicate something like this @ home. Unlike others, I did not find this cake dry. I did add 3oz applesauc to avoid that though. Sprinkled blueberries b/w cake batter rather thaan stirring in. Bumped cinnamon up to 1 tsp. Also, surprisingly light for a such a thick batter! Sweetness of cake alone is my only fault.

Asian Orange Chicken

This recipe was a comedy of errors for me but was still wonderful. There was a delicately sweet orange taste, a subtle taste of ginger, and a hint of spice. I accidentally added 1C of extra water and accidentally doubled the orange zest. I used bottled lemon juice and bottled ginger (increased to 3/4 tsp because it wasn't fresh). I also used normal onions and plain white sugar because I prob only had an ounce of brown. I strained off the zest, pepper flakes, onion, and garlic and added the corn starch to the liquid. It was divine. I will def try again and perhaps it will be even closer to restaraunt quality (not that it wasnt already worthy).

Carrot Cake III

Followed the advice of those on the site and increased cinnamon. Also added a bit of fresh grated nutmeg and ginger. I highly suggest using the 3/4 cup of apple sauce because it doesn't jeopardize flavor or moisture but reduces calories. 2 cups of white sugar also works well, brown is not absolutely needed but I haven't tried the recipe with 1 cup of both. Delicious with or without cream cheese icing.

Flaky Food Processor Pie Crust

I was extremely apprhensive about this recipe because it was my first time making a pie crust. I have yet to taste it, but it looks wonderful and is very flaky. I baked @ 450 covered with foil for 8 minutes, and an additional 5 without the foil. I'm afraid to try any other recipes because they may fail, but this is always a fall-back option.

These cookies are absolutely delicious. My batter made exactly 2 dozen. I omitted the choc. chips and they were still great. I would say this is a keeper, but the amount of butter and sugar is excessive for me. If I could replicate the flavor without the calories, they would be perfect.

Eggplant Parmesan I

I quite enjoyed this dish, but I did change the directions and ingredients. I did not pan brown the eggplant slices, baking them instead with their bread crumb coating ( I used Italian crumbs)for 10 minutes. Rather than topping with chesse and basil, I also added italian seasoning, parsley flakes, and oregano for more flavor. These spices, combined with the ricotta made this a delicious meal. I would like to experiment with spinach ricotta next time.

Best Chocolate Chip Cookies

Left out the salt and walnuts, and these still came out absolutely delicious. I also used all white sugar. This recipe is so versatile, you can afford to leave out things like this, or add things you might want without jeopardizing the cookies. I used an ice cream scoop to portion the cookies and flattened them a bit so they cooked in the centers. I love this recipe!

Snickerdoodles III

These cookies were delicious; flavorful but not at all too sweet. It is missing 1 star only because I had a problem with the size of the cookies which is most likely my fault. I only got about 18 cookies as opposed to 24. Due to the thickness, they were slightly undercooked in the centers. I will definitely try these again and experiment with the sizes. To reduce fat and calories, use light butter and sugar substitite. Work just as well!
