Slow Cooker Chicken Taco Soup

Reviewed: Jul. 5, 2009
This was easy and has a wonderful taste. It is almost thick enough to put on taco shells if you want to. When I took it to work for lunch, the aroma was so wonderful my co-workers all wanted to try it. I used Bill Echol's Taco Seasoning I for the spices. I don't like the sodium in packaged taco mix.

I have never used packaged taco seasoning mix but my taco always seemed like they were missing something. This blend is perfect. Thanks for sharing Bill.

Sweet Salsa and Cinnamon Chips

Reviewed: Jul. 4, 2009
I am rating the chips only. They were easy to make and very good. I make my own fruit salsa recipe, from red apple, grapes, strawberries, peach and preserves.

Individual Egg Bakes

Breakfast for dinner. Mmm good. Wanted breakfast for dinner, and this recipe fit the bill. I made some with bacon and some with ham, added Mexican cheese to the top. We liked the bacon ones better. I pre-cooked the bacon, and didn't have a problem with it being soggy like one other reviewer stated. Thanks for the recipe.

Grandma's Peach French Toast

Reviewed: Apr. 26, 2009
Enjoy! I made a few changes, added an egg and some milk. Sprinkle the bread slices with cinnamon and then cube. Mix into egg milk, vanilla mixture, let sit while I prepare the brown sugar (used only 1/2 cup) and butter (1/4 cup). It is peach season, so I sliced fresh peaches. This is so delightful, you could serve it as dessert.

I followed the recipe exactly. I don't see what everyone is raving about. I will stick with my Beer Butt Chicken. Thanks for sharing though.

Ellen Szaller's Mashed Potato Pancakes

Reviewed: Jan. 10, 2009
I made these to use leftover mashed potatoes. I followed the recipe except I needed to add more milk for a better consistency. They were okay, but I would not make extra mashed potatoes just to have them.

Easy Pasta Fagioli

Reviewed: Jan. 8, 2009
I have made this recipe twice. First as written. It was good, but needed changes. First used 1 (14oz) can diced tomatoes, 1 (14oz) can tomato sauce, 4 (16 oz) cans of chicken broth. The added 1/2 of a zucchini diced, 1 (10oz) pkg chopped spinach thawed and drained, and diced fresh mushrooms (about 1/2 cup). I also left out the pasta. I cooked the pasta and added when served.

Spinach and Cheese Stuffed Pasta Shells

Reviewed: Jan. 3, 2009
My family enjoyed this recipe. I followed some other advice and reduced the spinach to 1 pkg., added 1/4 lb. hot sausage, and 1 cup of mozzarella in place of one cup of the parm. Thanks for sharing.

Autumn Apple Salad II

This was just okay for me and my family. I made it for a family get together and it was the only thing I had leftover. None of the guest wanted any to take home. I will not make this again.

Slow Cooker Cranberry Pork

Reviewed: Oct. 19, 2008
I have been making this for a couple of years. The first time I made it was for a family party. All the guest raved over it. I do brown the roast before I put it in the slow cooker and use whole cranberry sauce instead of jellied. I will make this all through the fall and winter.

Loaded Potato Soup I

Reviewed: Oct. 3, 2008
I have been making this soup for a couple of years. I just decided to write a review and to see what others were saying. This soup is the best. I always make it a day ahead so the flavors blend together. I add chopped green onion to the soup and serve it with green onion and bacon bits. Whenever there is a family get together I am asked to bring this soup.

Grilled Marinated Shrimp

Reviewed: Jun. 15, 2008
Just made this for the DH for Father's Day. It was a hit. I served it over angel hair pasta tossed with a little oil olive. I also heated petite cut tomatoes with chopped fresh basil,Italian seasonings and a very small amount of sugar and tossed this with the pasta to. What a great blend of flavor with the marinated shrimp.

Easy Clotted Cream

This was everything the recipe said it was. Easy, alternative to the real thing. Does anyone have a recipe for the real thing? I have made this for a tea party, for an event at work and today for Easter. I have had many compliments and request for the recipe. Thanks for the recipe.

French Toast Casserole

Reviewed: Mar. 23, 2008
Great recipe. Here are my changes. I used French Bread from a bakery, reduced the milk to 3/4 of a cup, combined the egg mixture with the bread in a bowl and tossed then let it sit for 10 minutes. Place in an 8 x 8 pan, top with 1 cup frozen blueberries, then 2 tbl brown sugar mixed with cinnamon and nutmeg. Baked covered at 350 for 15 minutes, uncovered for 30. Served with warm syrup. It was perfect.
