Idaho Potato Cake

Moist and delicious. A great afternoon snacking-style cake. If I was serving this to guests, I would add four ounces of melted and cooled unsweetened chocolate at the same time as the potatoes, frost with a nice, fluffy chocolate frosting, and serve with a scoop of high-quality vanilla ice cream. Thanks for the recipe!

Strawberry Torte

Very good, but I thought it needed a greater proportion of lady fingers to cream filling to be balanced. I lined my pan with ladyfingers and put a middle layer of strawberries and ladyfingers as other posters suggested, but it still felt like too much "creamy" in every bite. Next time I make this I will make this a four layer dessert, with ladyfingers on the bottom and another three layers of cream and ladyfingers. Be sure to serve very cold; this dessert "melts" quickly. Good flavor and presentation.

Italian Sausage Soup with Tortellini

Grandmother's Buttermilk Cornbread

Excellent! Tender and moist. I used a 9-inch pan and baked in for 30 minutes and it came out great. I always use Bob's Red Mill Stone Ground Cornmeal and it worked perfectly in this recipe. A keeper!

Cod with Italian Crumb Topping

My family liked this recipe quite a bit. Like other reviewers, I passed on the egg white and used a very thin brushing of mayo on the cod before adding the crumb topping. Instead of packaged bread crumbs, I made fresh ones from whole wheat bread. I also substituted fresh minced garlic for the garlic powder and dried oregano and basil for the italian seasoning blend. A lovely, quick main course that I served with a variety of steamed vegetables and wild rice.

Honey-Garlic Glazed Meatballs

My family liked these, but we agreed that the sauce was on the too-sweet side and thicker than we would have liked. Next time I will cut the ketchup with some beef stock to see if that keeps the sauce thinner and less syrupy sweet. Also, I added a teaspoon of oregano, 1 minced garlic clove and minced scallions to the meat mixture to give it more flavor. The breadcrumbs I used were fresh whole wheat and they worked nicely. I shaped one tray of 1 1/2 inch meatballs and had enough mixture left for another tray of mini-meatballs (1/2 inch) that I will freeze and throw into a soup later this week.

Chocolate Mint Candies Cookies

Wonderful recipe. I made these exactly as the recipe stated, except that I didn't grease my pans at all. I had no trouble whatsoever with sticking. I agree with another reviewer that these taste like Thin Mints, but better. I like the chewy-gooeyness of these better than the crispness of Thin Mints. The cookies are as beautiful looking as they are tasting. They will make an excellent addition to my Christmas cookie trays and to my recipe box!
