Garlic Asparagus with Lime

The tangy lime and sweet onion compliment each other very well in my opinion. I used onion instead of shallots and used mostly olive oil with only a touch of butter. I also sprinkled a bit of cheese at the end - quite delicious! Next time I will probably start the asparagus first because the onion and garlic got quite crispy towards the end.

Stuffed Jalapenos III

I had something similar at a party and they were so delicious I couldn't stop thinking about them. One thing the party-goers did was use onion & chive cream cheese instead of plain cream cheese. Honestly the recipe is a great stock recipe that you can personalize as I've seen other reviewers do so far. Worth a try!

Vegetable and Tofu Stir-fry

This was my first time cooking with tofu and fresh ginger so I was happy that it came out edible. I baked the tofu on 350 for about 15 minutes. Don't be gentle with it when cutting as that's when it tends to crumble. Stir-fry is all about the sauce. I found this sauce to be sweet and somewhat tangy. I didn't follow the recipe to the T-spoon, but it was still good. I don't know if I could crave this stir-fry, though, because I'm not a huge fan of sweet entrees. There are a lot of vegetables so I had to double the sauce called for and it turned out perfect. Nothing wrong with extra sauce.

Breakfast Kolaches

I didn't have a bread machine so I used my kitchenaid mixer, the kind that can probably take over the world some day. I ended up with a franken recipe from that manual which goes as follow: I heated the milk, sugar, and butter on low heat until it was dissolved/melted. Per my franken recipe instructions I mixed dry ingredients together (-1/2 cup flour) and then added liquids gradually. Last I slowly added the rest of the flour. It turned out really well. I formed the dough balls and let those sit overnight in the fridge, but I probably should have made them up until the point they are popped in the oven because it kinda had a weird crust the next day. Still turned out good, but if you are preparing them for overnight storage make sure you fold in the fillings before they siesta in the frig. Thanks for the delicious recipe!

Blackberry Spinach Salad

I absolutely love this salad. I've found that as long as you keep the feta, spinach, walnuts, and tomatoes you can add pretty much whatever you want (chicken, blackberries, and so on). I make a balsamic vinaigrette to go on mine. My only complaint is that everything tends to sink under the spinahc, so when you are adding the psinach make sure to kinda press it down a little bit.

Hearty Meatball Sandwich

This sandwich was amazing, easy, and fast. The only caution I have is to make sure to mix up the meat loaf well (I had to use my hands). I served it with tater tots and made sure to top it with gratuitous amounts of cheese.

Campbell's® Green Bean Casserole

Not bad at all, I guess, for my first time trying this kind of casserole. My only complaint is that it didn't taste so good when it was reheated (and as I'm eating for one, I had plenty of time to test that theory).

Italian Sausage Soup with Tortellini

Very tasty soup, hearty and warm. Goes good with bread and butter. I wasn't a fan of how long it took to make, even with the helpful tomato peeling tips from other reviewers. Next time I might try fresh tortellini; I wussed out and got pre-packaged and for some reason the stuff on the inside tasted gross. But that's not the recipe's fault.

Chicken Enchilada Soup II

I think I used the wrong type of cheese. I didn't understand the directions at first and used cheddar instead of the "velveeta" block processed cheese. Might have changed the outcome drastically. Still, the soup was decent and went very well with beer.

Calabrese Style Spaghetti

I added chicken to the recipe for more substance. I think next time I'm going to cut down the garlic and cheese AND butter, it was WAY to flavorful. My tastebuds like food lightly seasoned.

To Die For Blueberry Muffins

I read other reviewer's comments, used buttermilk and added some vanilla. Used canned blueberries too, and the muffins came out great @ 20 minutes. Extra brownie points at the office! Thanks for the tasty blueberry muffin recipe!!

Baked Pork Chops I

By itself the recipe was okay, probably will have to play around with the recipe to tweak it. However, I'm saving this because the sauce makes an EXCELLENT base for pork stew. I made more meat than I could eat so the next day I chopped up some potatoes and carrots and the leftover pork and made a terrific stew with the leftover sauce (added water of course to thin it out).

Scalloped Potatoes and Onions

I hadn't liked scalloped potatoes as a kid and decided recently to give it another shot. This recipe worked out very well. It's very easy to make. The only change I made was substitute light sour cream for the mayo and topped with shredded cheddar cheese. Delicious!!

Shrimp Linguine

A nice solid base recipe. I modified it slightly to suit my tastes, but not significantly. Thanks for the other reviewer hints on how to make the shrimp turn out well. I boiled briefly in water with a mixture of paprika and chili powder, then rinsed the shrimp immediately in ice cold water.
