Sweet Corn Ice Cream

Suffice to say this is one of the more unusual kitchen quests I've been on. Corn? Cream?

I had been looking forward to making this for over a week. There was something about it that caught my attention in a big way. I had to follow through.

The reason I had been looking forward to making it for over a week instead of actually making it a week ago is because my ice cream maker freezer bowl wasn't getting frozen...the freezer isn't cold enough, I guess. I left it in there a week hoping it would freeze properly. I know it can, in the right conditions. I made peach ice cream at my parents a few weeks ago. Their freezer doesn't mess around.

So if you read the previous ice cream post, I was basically waxing about a great vanilla recipe that didn't freeze and was more like soup, but the best cold sweet soup ever. This is basically a repeat. Albeit a weird repeat.

Corn Ice Cream. I love you. Freezer? I'm disappointed.

The stuff is freezing now in tupperware (wah) and I will dutifully try it when it's solid (although there's something to be said for a mug of liquid sweet corn and a few frozen banana cookies for dipping). If you are interested in trying it, I urge you to! It's really very tasty and simple.

And here's the recipe:

1 can sweet corn kernels, drained
1 cup whole milk
1 cup cream
1 14oz can sweetened condensed milk
1 tsp vanilla
1 tsp cinnamon

Blend the corn and whole milk; strain and press as much liquid out as possible. Return the corn milk to the blender, add in remaining ingredients and mix well. Chill thoroughly and freeze in an ice cream maker.

*One thing I did to help my poor not-so-frozen bowl was to freeze the corn first. I didn't strain it and blended it for about 5 minutes. It helped a bit, but obviously there is no substitute for a completely frozen mixer bowl. Point in case, there are a few pieces of corn pulp but if you don't mind then it doesn't hurt to skip the straining.

If you have the ingredients and nothing better to do and can put up with a few weird looks, go for it. I would and will make it again some time, even if I have to eat it all myself.

This looks fabulous!!! I may have to give this a whirl (I have trouble getting ice cream to set, too, in our maker sometimes. There seems to be no rhyme or reason to why sometimes we get ice cream and sometimes we get really cold vanilla soup...)! Thanks for sharing!

OMG OMG OMG OMG OMGEEEEEE THIS IS DELICIOUS! I just had some of it after it had a chance to freeze...........it is fabulous. The frothiness from the blender turned into an almost ice cream texture, not iced cream like the vanilla I tried to make. The sweetened condensed milk works well with corn. OOOOOOOOh yes. Oh yes. I am making a caramel to go on top. Mmm. Sorry for gushing but it really is delicious.

Heidi, your reaction now really makes me want to try it. I don't have an ice cream maker but I may just improvise. Thanks for posting.

You really are adventurous! If you made it for me I would try it, but otherwise I don't think that combo would pass over my lips. The peach ice cream sounded real good! Maybe it is time for a new freezer? What flavor will you try next? Nice blog.

In your comments about the Merenges, you mentioned that you didn't know how long to whip the egg whites. I have a Kitchen Aid too. Put it on the highestsetting and whip it until it looks like melted marshmallow that won't come together then give it another 3-5 minutes and presto! It will be stiff peaks!

It really is worth the try, even just for some funny looks from friends. @peacem: Thank you sooo much! Those poor merenges...it makes me sad. I'll try that again some time, it's filed in the "horses to get back up on" folder right now :)

About Me
I enjoy trying new recipes and unusual ingredients. There are few foods I will turn down without a second thought - sweets is one of them, and fiery hot spicy food is the other. As I'm getting older that is changing, though. I love reading cook books and doing research about food. It fascinates to no end! I usually create a recipe from several different ones. On the non-cooking side of things, I'm a Christian, native Texan and faithful Longhorn with two cats and a great boyfriend! I love the outdoors and spending time with my family and friends. I'm also somewhat obsessed with the nuclear winter and extreme survival situations.
My favorite things to cook
In general I try to cook from scratch. Any kind of bread - rolls, loaves, boules, baguettes, buns, biscuits, quick breads - will catch my eye. Pastas, soups, and cookies. I am absolutely in love with cake batter. Once I had a party in middle school where we just made a bunch of cakes and ate the batter.
My favorite family cooking traditions
The Thanksgiving and Christmas turkey/waldorf salad/mashed potatoes with gravy by my mom, buttermilk biscuits on Sunday morning before church from my Dad, grilling hamburgers in the summer in the backyard, black eyed peas for new years dinner, decorating sugar cookies on Christmas Eve with my sister, coffee any time of the night.
My cooking triumphs
I can rival my dad in his biscuit making ability. I have the perfect dinner roll recipe - my very own. I taught myself how to make jam and jelly. I taught myself how to make bread!
My cooking tragedies
dense as a stone wheat bread, homemade condensed milk tastes weird key lime pie, onions and sugar have no place hanging out together in mashed sweet potato, there's nothing puffy about my lemon meringue, and the bottom of the fish tank poached salmon.
