I used about half the blue cheese and it was perfect. Baked it for 20 minutes. Yum and thanks for the recipe!

Chicken Salad Balsamic

Reviewed: Sep. 21, 2010
So good! I give it 5 stars for being both delicious and quick/easy to make. I used Tyson pre-cooked diced chicken (3 packages, think it was 6 oz. each). I also added about a tablesoon of honey. Otherwise, I followed the recipe exactly. I used green apples and topped the chicken salad on some spinach. I will make again!

Maple Salmon

Reviewed: Jul. 26, 2010
This is my new favorite way to cook salmon. I give it 5 stars for taste and convenience. Only change I made was to poke holes in the salmon with a fork before pouring the mixutre on to marinate. Delicious!

Baked Pork Chops I

Reviewed: Dec. 16, 2009
Better than Mom's! I used boneless loins, added a couple of dashes of cayenne and extra garlic to the rub. I also browned them well in the pan, baked 30 min and 30 more min with gravy. This one is going into the monthly rotation!

Jalapeno Popper Spread

Reviewed: Sep. 20, 2009
Wow, this is so good! I made the recipe as stated, used jarred jalapenos, and baked it. I did add some breadcrumbs on top and fresh parm cheese. Tasted just like a popper. I served it with plain Melba toast. Tasty!

Crunchy Lemon-Dill Salmon

Reviewed: Jun. 22, 2009
This is so easy and delicious. I splurged and used fresh copper river salmon. I will try it again with Atlantic salmon, I'm sure it's just as good. Followed the recipe exactly. Thank you for submitting!

New Orleans Chocolate Bourbon Pecan Pie

Reviewed: Dec. 13, 2008
My husband thinks I'm evil. He can't get enough of this pie. I've already make it twice, once for Thanksgiving and once for a Christmas party. Everyone LOVED it and I got so many compliments! Delicious. And it is so easy to make! I used light corn syrup with Ghiradelli 60% cocoa chips. Make sure you use a deep crust or it will bubble over. Also, I lined the chocolate chips on the bottom of the crust before I poured the batter in (I did not mix the chocolate chips in) and I really liked it that way because the chips stayed somewhat intact. Thanks for the recipe!

Artichoke Chicken

This was great, a little heavy, but it was very good and I will make it again. I replaced half the mayo with half light sour cream.

Orange Chicken Stir Fry

Reviewed: Jul. 7, 2008
I'm rating this 4 stars because I made a few adjustments based on other reviewers' comments. First of all, I did not add any salt. However I did add 1 tablespoon pineapple juice and 1/2 teaspoon ginger powder to the sauce. When the chicken was almost done cooking, I added a bag of frozen veggies, a little green onion, sesame seeds, almonds, and water chestnuts. It turned out delish, I would not change a thing!

Spicy Red Snapper

Reviewed: Apr. 30, 2008
I just made this dish tonight. I had to use flounder instead of snapper because the store was out of snapper. However, it was fantastic with flounder! I can't imagine it being any better with snapper, but I'm looking forward to trying it. I followed the recipe exactly (except for the flounder substitution) and it was spicy but not too spicy. Very easy to prepare and not too time consuming. It reminds me of an Italian dish without all the carbs of a typical Italian pasta dish. This will become a weekly meal at my house. Thank you for the fantastic recipe! :)

Baked Tilapia with Arugula and Pecan Pesto

Reviewed: Apr. 4, 2008
This is good, but it seems to be missing something. Salt, maybe? I was hoping for a little more flavor. The arugula did end up tasting like spinach and it overpowered the other ingredients.

Roasted Corn on the Cob

Reviewed: Mar. 26, 2008
Followed the recipe to a T, only exception using butter instead of cooking spray on foil. Huge hit! We loved it...second day cut it off the husk and ate it as the "creamed" version. Would not change a thing!

Avocado Shrimp Ceviche-Estillo Sarita

Reviewed: Mar. 2, 2008
Whoa this recipe makes a ton. If you are serving it as a side dish, you can half the recipe and you will still have plenty left over. I let the shrimp marinate in the lime juice for 9 hours. It was a little chewy, so next time I will let it sit for about 4-5 hours. I'd also like to add some scallops. This turned out pretty good for my first time making ceviche.

These are great! I had a hard time finding wonton wrappers, but Whole Foods had them in the DAIRY section. These are great appetizers for a party. I made them for a group of 8 and everyone loved them. Perfect amount for a group of 8. Thanks for the recipe!

This dip is really good. I served it at a Mexican themed dinner party for 8 people and everyone loved it. There was plenty left over, too.

I just made this for Christmas dinner and it turned out great. I love the flavor the marinade gives to the ham. I will definitely make this again. Note - use a precooked, boneless ham for this recipe.
