Fluffy Pancakes
These are the BEST pancakes! My family loves them. No tweaks here, I make it just as the recipe says but I double it. I put vanilla in once and they were still good BUT they are delicious either way. Make these, now, and enjoy!

Mom's Zucchini Bread
First zucchini bread I've ever made and it came out very good. I also made muffins but I definitely like the bread so much more. I admit I altered it a little (lifestyle change and all). Used 3 cups zucchini - 3/4 cup of unsweetened apple sauce and 1/4 cup of oil - 1/2 cup of splenda sugar blend and 1/2 cup of brown sugar splenda blend - and I also added a little nutmeg - oh and I used pecans instead of walnuts (I love pecans). Came out great. Moist and delicious. I might make again. If my co-worker keeps giving me zucchini!! thanks for the great recipe!

Extremely good. This is how coquito is supposed to taste. I asked my grandmother for her recipe and then I couldn't find it. This one is pretty much the same except mi abuela doesn't cook the eggs AND she puts A LOT more liquor...too much I think. You can add more to this but too much takes away from the wonderful flavors. ENJOY and Merry CHRISTmas!!!
