Grilled Salmon I

Reviewed: Jun. 9, 2014
Got near to completion of making this recipe and then came to the realization that we did not have cashews or any other nuts in the house, excepting a bag of salted, in-shell peanuts. My improv was to cut some going-stale pretzel sticks into small chunks and use them instead. Probably not as good, but definitely good enough. Wait, I also had no soy and used instead Worcestershire. Why that seemed immaterial, I know not, but it was perfect.

Fast Salmon with a Ginger Glaze

Reviewed: Jun. 9, 2014
I happen to love ginger and was therefore incredibly pleased by just how bitey a bite the ginger in this delivered. Only sad thing was that the Copper River Salmon was so delicious off the grill, it was a shame to even put the sauce over it.

Boiled Water

Reviewed: Mar. 19, 2013
I had some trouble with the recipe due to it being unclear (probably the editors at Allrecipes changing Seth's recipe. I KNOW they do that!) I wasn't sure what size pot to use, so I had to guess. Luckily, the water fit perfectly into one of my pots after a few failed attempts. I wasn't sure how large the bubbles should be before I removed the pot from the heat and no time is given for how long to cook it, leaving me to guess. I don't think it tasted burnt, but it wasn't necessarily tasty either. Not sure if I'm supposed to do something after I remove it from the heat, but I found that I had quite a bit less than a cup, so...I don't know if it's the altitude, or what! I'm sure with a few changes this can be a 5-star recipe, but for me it's a 3.

Fast and Friendly Meatballs

Reviewed: Mar. 10, 2013
Other than it needing a strong hit of salt, this is a great way to get meatballs on the table in a fairly quick manner.

Pan Fried Daikon Cake

Reviewed: Jul. 28, 2012
Made these with the crazy abundance of Shunkyo radish we got from our first few CSA boxes of the season and fresh chives in place of the red onion. Very solid meat-free burger option, but was more a score for me as it allowed me to clear out all those radishes. Won't wonder what to do with them next year. Also, the greens on the Shunkyo radish are delightfully tender. Go right into salad without blanching. Excellent.

Ann's Dirty Rice

Reviewed: Feb. 23, 2012
Great Mardi Gras dinner slathered in a generous seasoning of Frank's Red Hot. Used ground pork instead of beef, chicken bouillon in place of beef, and also added some smoked sausage. Will start dinner earlier next time so I can use a lot more bell pepper, but love the simplicity and relative quickness. Oh, used Emeril's Essence as seasoned salt, too. Great idea!

Banana Banana Bread

Reviewed: Oct. 17, 2011
My first time making banana bread. Was even doing while feeding a toddler. Still came out great. Three people demolished about 85% of the loaf over the span of one (albeit somewhat-lengthy) football game. Will use this again when the bananas start browning faster than the boy can eat them!

Ukrainian Red Borscht Soup

Reviewed: Aug. 24, 2011
Great googly moogly. Love this recipe. Okay, so I left out the sausage, subbed golden beets (assuming red were preferred), left out the garlic and used a can of tomatoes with chilies in place of plain diced. Definitely not Ukranian by the time I got finished, but I'm sure were I to offer it to someone who spoke Ukranian, they'd be okay with it.

Could not be happier with how simple and tasty these turned out. Cannot wait to make again. May even make in bulk and freeze for future dinner solutions.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: May 4, 2011
Ridiculously easy and quick. Perfect for a light dinner. In fairness, I was being super lazy and impatient and left out the onion, so it was flavored only by the salt, cumin and garlic, but I loved it. Spooned it on small pieces of crusty baguette. Couldn't be more pleased with adding this one to the make-dinner-fast arsenal.

Rosy's Palak Paneer

Reviewed: Apr. 17, 2011
I generally like this, but will probably make several adjustments next time I make it. I do think the proportions are a bit off. Definitely could use more spinach and garam masala and less paneer (if only to cut the fat) and maybe also tomato paste. I also added some red pepper flakes for extra flavor, which I'll keep in future editions.

Hungarian Mushroom Soup

Reviewed: Nov. 9, 2010
I like it. I don't love it. A little too salty for me and I'd have really liked more dill. Still, it does make a decent bowl of soup and I'm pretty sure with some minor tweaking it'll be even better.

Slow-Cooker Chicken Tortilla Soup

This shouldn't be as delicious as it is considering how little work goes into it, but I'm going to be eating a LOT of this through the winter. Nicely done!

Absolute love. Wouldn't have thought to do this, but will be repeating frequently. I used a chevre gouda instead of the Parm and it was terrific. Can't wait for tomorrow lunch with the leftovers.

Light Coconut Cream Broccoli and Barley Soup

Reviewed: Jul. 2, 2010
Too much pepper by far! You can taste a brilliant soup hiding beneath a vicious layer of pepper here. I will make this again with a fraction of the pepper, but I used less than the prescribed amount and am kicking myself for not going with my instinct. Dangit!

Ash-e-jow (Iranian/Persian Barley Soup)

Reviewed: Apr. 28, 2010
For ease of preparation, flavor and food cost, this MUST be a five-star recipe. I shall add that I made this a while ago and just broke some of it out of the freezer. It froze very well. My only warning would be to take care with the turmeric; not only can/will it stain, it can overwhelm other flavors in the dish. I also enjoy stirring a good bit of plain (goats milk) yogurt through it when it's hot and eat with buttered crusty bread. Check out the nutrition stats and add it to your repertoire post-haste! What are you waiting for?!
