Salmon Salad

This was great! I took the advice of other reviewers and omitted the seasoned salt but I did add a couple of pinches of Old Bay. Terrific recipe!

Blueberry Muffins

Easy Broccoli Quiche

I made this for an event and was told it won best dish of the night! I did as another reviewer suggested and put the cheese in the bottom of the crust before pouring the egg mixture in. I also used half mozzarella and half cheddar and made sure to use fresh broccoli, not frozen. It does need more than 30 minutes. I think I gave it 40. Wonderful recipe!

Curried Quinoa

Excellent dish! I took the advice of other reviewers and used 2 tsp. of regular chili powder. It gave it just enough spiciness. I also used vegetable broth instead of chicken and added a can of rinsed garbanzo beans to up the protein even more. I will make this one again!

Peanut Butter Chocolate Chip Cookies

One of the best! I extended the baking time to 13 minutes and increased the oven temp to 375 degrees and they were perfect!

Apple and Onion Dressing

This was an excellent basic stuffing recipe. I took the advice of another reviewer and used about 3/4 of a stick of butter and one cup of broth. I used vegetable broth since I'm a vegetarian. Everyone really enjoyed it!

Lentil Quiche

Excellent recipe! I put about a tsp. of minced garlic in with the onions as they were cooking. Instead of fresh tomatoes, I used about 1/4 c. sundried tomatoes in olive oil. I didn't have a full two cups of broccoli so I used about 1.5 cups broccoli and half a cup of cut green beans. No need to add cheese. It was very tasty and lower in fat and calories without it. I'll definitely make this again and maybe throw in mushrooms next time.

Lemon Lentil Salad

This is excellent! I didn't let the lentils sit for 30 minutes after cooking. I rinsed and drained them immediately and then added the dressing. I added additional salt and used finely minced white onions instead of green. I will make this again!

Basic Baked Spaghetti

Too Much Chocolate Cake

Excellent cake! I used one scant cup of sour cream and one scant cup of oil without changing a thing. I took the suggestion of another reviewer and used mini chips. This is a keeper!

Scrambled Potatoes

I made this for a Rev War encampment and it easily fed 6 of us. I used half the bacon fat and half the cheese as I could imagine the sound of major arteries slamming shut as it cooked. It got rave reviews, i.e. "this is my kind of breakfast!". I also sauteed an onion while the bacon was cooking and I should have used two as the onion added a great flavor to the dish.
