Almond Rum Cake

This cake was SOOOOOOOOOOO good. I too adapted it a little more to add more rummy goodness. I left out the lemon zest and juice and added 2 tsp of rum. I also used 6 tbsp of butter and 1/4 cup of extra light olive oil in place of the the 2/3 cup butter to lower the saturated fat content of the cake. Finally, I used the previous reviewers recipe for a rum glaze but it made way too much, you probably only need 2 tbsp melted butter, 1/4 cup brown sugar, 1/4 cup white sugar, and 1/4 cup rum (after removing from heat). It was very good moist and addictive!

Butter Cake

Not great, not awful. One guest said they tasted like cornmeal. I didn't think they were that bad. Edited for second time baking: MUCH better this time. I wonder if I had overbeaten it the first? Upgraded from 3-4 stars.

Spaghetti Carbonara II

Very good!!! The only downfall I saw was the sauce to pasta ratio was too low. I'd just use less pasta next time...maybe 2/3 of what the recipe calls for.

I'm eating this right now and had to review. Its just as good as mom's sauce! I had a plethora of subs though. Didn't like the size of the picante sauce jars(I had to 5x the recipe) so I used mild salsa. I also used spaghetti. Finally, I ran out of chicken so I used cooked ground beef. Yum!

One of the best dishes ever! Per other suggestions, I used a big glop (probably 3-4 tbsp of crunchy natural PB) and then used chopped peanuts as a topping.

Spiced Raisin Mini Muffins

These are delicious! My daughter wanted muffins and I have no eggs...so these worked great! I halved the sugar, and added 1/4 cup of orange juice to the recipe. They took a little longer to cook because of this. Still absolutely delicious!

Eggnog Cheesecake III

This is so easy and delicious!!! I used a store bought crust to save time, but then got creative and made a chocolate mint crust for the rest of the batter. These 'extras' were by far the best!!! I just crushed thin mint cookies up and added 2 T butter melted, mixed and baked for 10 minutes.

Dark Chocolate Cake I

Very good! The cake came out of the pan flawless and was easy to frost. The only downside was it was a little dry, but IMO, that can be said of most cakes. I'd give it 4.5 stars if I could. I used a chocolate ganache between layers 1 and 2, and cool whip and strawberries between 2 and 3, frosted the cake with buttercream and sprinkled crushed Oreos on top. Kind of a hodgepodge but everyone loved it!

My husband just said this was the best chicken he's ever had! Few tweaks--I omitted the salt since one reviewer said it was too salty, and added 1/4 cup sauteed mushrooms to the gravy.

Hot Chicken Salad III

It was easy to do and good, but it lacked that "bam!" I like. Of course this was a last minute thing and I had to substitute ranch dressing for mayo, and green onions for celery and beef for chicken (okay, kidding about the chicken). I'd recommend some zesty spices as an addition.
