Cranberry Walnut Relish I

This is so easy and good. I like my cranberries a little more on the sweet side, and this one definitely fits the bill! My mother-in-law has always made the grinding-everything-up super tart make-me-pucker recipe, but now I think my father-in-law likes this one better!

Yia Yia's Tzatziki Sauce

Wow! My kids love this with pita bread, but they love it so much, they practically lick it off the plate! Although it's better with the cucumbers, I usually leave them out. I add a little lemon juice, too. YUMMY!

Lemon Horseradish New Potatoes

Dad's Peach Ice Cream

I made this for an ice cream social we hosted at our house. I substituted with splenda, and I used canned peaches. When it was done, I thought it could be a little more "peachy", so I quickly chopped up another big can of peaches and stirred them it. I put the whole batch in the deep freeze to solidify before we served it. It got rave reviews among all of our guests, not to mention the diabetics who were thrilled with it!

Rocky Road Ice Cream

Wowza! What can I say except that I scored major brownie points :) with my husband whose favorite ice cream is rocky road! Delicious! I did substitute whole milk for the light cream, and I added extra milk at the end to fill my 1 gallon freezer container to 2/3 full. I dumped the pecans and marshmallows on the top of the mix before freezing so I wouldn't have to bother stopping it in the middle. It came out great! You should try this recipe.

Tart Grapefruit Cooler

If you like tart flavors, this one is for you! I loved it, as did my 3 year old son who's all into spicy and sour. I also tried it with ginger ale instead of the club soda. That's good, too!

Cubanos Frijoles

This is a fantastic recipe! I used stuffed green olives instead of black olives. I certainly didn't need to simmer it for 20 minutes. I think I messed up because I drained the black beans. It was still great! My husband couldn't stop nibbling on it every time he walked through the kitchen.

Salmon with Tomatoes

Brace yourselves, fresh fish lovers. I actually used a can of salmon for this recipe. I took out the big bones and skin and was careful not to stir too much. I wanted a few chunks. It was so simple because I threw everything in my electric skillet at once. I added some capers as one other reviewer did. Excellent with tomatoes from my garden. My 5 year old daughter loved it! I'm making a double batch from now on.

Amy's Cilantro Cream Sauce

I followed the recipe exactly, and it was great! We not only enjoyed it as a dip with chips, we also served it as a sauce with "Chicken and Garlic" from this site (except we used chicken breast tenders instead of chunking it up). My husband even stirred it into pasta to eat with his leftover chicken. We really enjoyed this refreshing spicy sauce.
